Job Description

Job Summary

The Head Pastry Chef will own the pastry/pantry function for all 5 branches. You will develop menus and recipes, set production standards, train and supervise outlet pastry teams, control costs and inventory, and ensure food safety and presentation are consistent across the chain.


## Key Responsibilities

- *Menu & Recipe Development*

 - Create, test and standardize pastry, dessert, bakery and pantry recipes for multi-branch roll-out.

 - Introduce seasonal and promotional items.

- *Quality Control & Consistency*

 - Ensure consistent taste, texture, portion sizes and presentation across all outlets.

 - Conduct regular quality checks and blind tastings.

- *Production Planning*

 - Prepare daily/weekly production schedules and batch sheets.

 - Optimize production to reduce waste and ensure freshness.

- *Training & Team Management*

 - Hire, train and mentor pastry cooks and pantry staff at each branch.

 - Create SOPs, recipe cards, and training materials.

- *Inventory & Cost Control*

 - Manage procurement, supplier relationships and inventory levels.

 - Monitor food cost, portion control and minimize wastage.

- *Operations & Compliance*

 - Ensure compliance with food safety, hygiene standards and local regulations (HACCP/FSSAI knowledge preferred).

 - Maintain kitchen equipment and coordinate maintenance.

- *Cross-branch Coordination*

 - Travel to branches regularly for audits, training and production oversight.

 - Coordinate inter-branch transfers if required.

- *Reporting*

 - Provide regular reports on sales, costs, stock, wastage and manpower needs to management.



## Required Skills

- Strong knowledge of pastries, breads, cakes, desserts, chocolate and sugar work.

- Recipe standardization and batch scaling.

- Costing and inventory management.

- Leadership, training and team-building skills.

- Good communication in English, Hindi and/or Gujarati.

- Ability to work under pressure and meet tight deadlines.

- Basic computer skills for inventory and reporting (Excel, POS familiarity).


## Working Conditions & Travel

- Location: Ahmedabad (required to travel across all 5 branches).

- Travel: Approximately 20–50% travel between branches (depending on schedule).

- Working hours: Rotational shifts; typically 8–10 hours per day, 6 days a week (flexible for peak periods).

- On-call for special events and peak seasons.
