Crave by Leena is a premium plant-based patisserie in Bengaluru, specializing in vegan, gluten-free, and sugar-conscious desserts. Founded by internationally trained pastry chef Leena Mathai, we craft inclusive, high-quality desserts that allow everyone to celebrate without compromise.

Our clientele includes Boeing, Goldman Sachs, Sony, and Taj, and we are known for our craftsmanship, innovation, and operational excellence.

Role Overview

We are looking for a hands-on Bakery Sous Chef to oversee daily bakery operations, ensure exceptional product quality, maintain hygiene standards, lead and develop the bakery team, and contribute to ongoing R&D and innovation.

Key Responsibilities

Production & Operations

  • Plan and manage daily bakery production including cakes, pastries, and custom orders
  • Ensure consistency, quality, and timely execution of all products
  • Coordinate with sales, operations, and logistics teams for smooth order fulfilment

Quality, Hygiene & Compliance

  • Maintain strict FSSAI-compliant hygiene and food safety standards
  • Monitor kitchen cleanliness, safety practices, and SOP adherence

Team Leadership

  • Lead, train, and mentor bakery staff
  • Allocate tasks, manage schedules, and ensure team efficiency

Inventory & Reporting

  • Manage inventory, raw materials, and control wastage
  • Prepare daily, weekly, and monthly production and wastage reports

Innovation & R&D

  • Drive product development for new desserts, seasonal menus, and festive offerings
  • Support innovation aligned with plant-based, health-conscious, and inclusive dessert concepts

Qualifications & Skills

  • 5+ years of experience in bakery or pastry production, preferably in a leadership role
  • Strong technical skills in fondant, buttercream, ganache, whipped cream, and pastries
  • Proven leadership, organizational, and problem-solving abilities
  • Passion for plant-based, sustainable, and inclusive desserts
  • BHM / Diploma in Hotel Management preferred
