Job Description

A Data Analyst โ€“ F&B Controls is responsible for monitoring, analyzing, and optimizing all cost-related and operational data within the food & beverage department to ensure profitability, cost efficiency, and compliance.

  • ๐Ÿ“Š Key Roles & Responsibilities1. Cost Control & AnalysisAnalyze food cost %, beverage cost %, and overall cost of sales
  • Track standard vs actual consumption
  • Identify cost leakages, wastage, and pilferage
  • Monitor daily, weekly, and monthly cost reports
  • 2. Inventory & Stock AnalysisEvaluate stock movement (opening, closing, consumption trends)
  • Conduct variance analysis between physical stock and system stock
  • Monitor slow-moving, non-moving, and expired items
  • Support monthly inventory audits
  • 3. Recipe & Menu EngineeringAnalyze recipe costing and suggest optimization
  • Evaluate menu profitability (high margin vs low margin items)
  • Assist chefs in standardizing recipes
  • Recommend pricing strategies based on cost trends
  • 4. Purchase & Vendor AnalysisAnalyze purchase patterns and pricing trends
  • Compare vendor rates and identify cost-saving opportunities
  • Ensure compliance with approved vendor lists
  • Track price fluctuations of key commodities
  • 5. Sales & Revenue AnalysisAnalyze daily sales reports (Dine-in, Takeaway, Delivery)
  • Track item-wise and outlet-wise performance
  • Identify top-selling and underperforming items
  • Correlate sales with cost to evaluate profitability
  • 6. Wastage & Variance ReportingTrack kitchen and bar wastage reports
  • Analyze reasons for variance (over-portioning, spoilage, theft)
  • Provide actionable insights to reduce wastage
  • 7. Compliance & Audit SupportEnsure adherence to SOPs in F&B controls
  • Assist in internal and external audits
  • Maintain documentation for:

  • GRNs (Goods Received Notes)
  • Issue slips
  • Stock registers
  • 8. Data Reporting & DashboardsPrepare MIS reports for management
  • Develop dashboards for:

  • Cost trends
  • Sales vs consumption
  • Profitability
  • Use tools like Excel, Power BI, Tableau
  • 9. Forecasting & BudgetingAssist in annual budgeting for F&B department
  • Forecast demand based on historical data
  • Predict cost fluctuations and recommend actions
  • 10. Cross-Department CoordinationWork closely with:

  • Kitchen team (Chef & Sous Chef)
  • Purchase department
  • Finance team
  • Provide insights for operational improvements
  • ๐Ÿ› ๏ธ Key Skills RequiredStrong knowledge of Excel (Pivot Tables, VLOOKUP, Power Query)
  • Experience in POS systems & inventory software
  • Analytical thinking and attention to detail
  • Understanding of food costing & yield management
  • Knowledge of hotel operations and F&B workflows
