Job Description
Designation: Commi
As a Café Food Handler, you will be responsible for food preparation, counter support, hygiene, and stock handling in a café setup with no separate service staff. Your duties include, but are not limited to, the following:
1. Food Preparation & Handling
- Prepare food items strictly as per approved recipes, SOPs, and portion sizes.
- Handle food preparation, assembly, and finishing independently.
- Follow FIFO (First In, First Out) method for all raw materials and prepared items.
- Ensure correct portioning for dine-in, takeaway, and delivery orders.
- Minimise food wastage and immediately report unavoidable wastage.
2. Counter & Order Handling
- Assemble and hand over food orders at the counter accurately.
- Ensure food is served fresh and at appropriate temperatures.
- Verify order details before handing over to customers.
- Inform the supervisor/barista in case of item unavailability or delays.
- Manage food counter operations smoothly during peak hours.
3. Food Safety & Hygiene
- Maintain high standards of personal hygiene at all times.
- Wear clean uniform, apron, hair cover, and gloves as required.
- Wash and sanitise hands between tasks and after handling raw materials.
- Prevent cross-contamination, including allergen control.
- Follow all food safety regulations as per FSSAI standards.
4. Cleaning & Sanitation
- Clean and sanitise workstations, counters, and equipment regularly.
- Wash utensils, trays, and containers after use.
- Maintain cleanliness of floors, sinks, drains, and storage areas.
- Dispose waste properly and keep the work area organised.
5. Stock Handling & Inventory Support
- Assist in receiving, checking, and storing raw materials.
- Monitor stock levels and report shortages, spoilage, or expiry.
- Label all prepared food with date, time, and batch details.
- Maintain proper storage practices as per SOP.
6. Quality Control
- Check food quality, taste, appearance, and temperature before service.
- Ensure food presentation and packaging meet café standards.
- Do not serve expired, damaged, or unsafe food under any circumstances.
- Report quality or equipment issues immediately.
7. Compliance & Discipline
- Follow all café SOPs, checklists, and instructions issued by management.
- Maintain daily production, cleaning, and wastage records if assigned.
- Be punctual and adhere to assigned shift timings.
- Inform management immediately if unwell or unable to perform duties.
8. Restrictions
- Complimentary food is strictly prohibited without prior approval.
- All food served must be billed or properly recorded in the system.
- Negligence in hygiene, safety, or SOP compliance may result in disciplinary action.
This role requires responsibility, cleanliness, attention to detail, and the ability to manage food and counter operations independently.
