Job Description

Commis I is a junior or entry-level chef position within a professional kitchen brigade system, primarily responsible for supporting senior chefs (specifically the Chef de Partie) with food preparation, maintaining hygiene standards, and learning culinary skills.

This role is considered the first rung on the ladder to becoming a professional chef and provides an opportunity to rotate through various kitchen sections (e.g., vegetable, sauce, fish) to gain comprehensive experience.

Key Responsibilities

The main duties of a Commis I include:

Food Preparation: Washing, peeling, chopping, and accurately measuring ingredients for various dishes as directed by senior chefs.

Cooking Assistance: Performing basic cooking tasks, such as preparing simple sauces or salads, under supervision.

Hygiene and Cleanliness: Ensuring their workstation is clean and sanitary at all times, and following all food health and safety regulations.

Stock Management: Assisting with accepting deliveries, organizing stock, rotating ingredients to prevent waste, and monitoring inventory levels.

Equipment Maintenance: Operating kitchen equipment safely and responsibly and maintaining utensils and tools in an orderly condition.

Learning and Development: Showing a commitment to learning new techniques and methods from senior chefs, as on-the-job training is a key aspect of the role. Required Skills and Environment

Commis I chefs work in a fast-paced and physically demanding environment, requiring qualities such as:

Attention to Detail: To ensure recipes and presentation standards are followed precisely.

Teamwork and Communication: Essential for coordinating with other kitchen staff and taking instructions effectively.

Ability to Work Under Pressure: Kitchens can be high-pressure environments, especially during busy service periods.

Stamina: The job often requires standing for extended periods and lifting items up to 25 pounds.

This role is a foundational step in a culinary career, with potential for progression to Demi Chef de Partie, Chef de Partie, and eventually higher roles like Sous Chef or Head Chef.
