Job Description – Chennai Style Biryani Master


We are looking for an experienced and passionate Chennai Style Biryani Master to join our kitchen team. The candidate must specialize in authentic Tamil Nadu style biryani, with strong knowledge of traditional techniques, spice balance, and bulk preparation.


Responsibilities:


Prepare authentic Chennai wedding-style biryani using long-grain rice, freshly ground masala, and slow-cooked methods.


Ensure proper marination of chicken/mutton with ginger, garlic, green chilies, curd, and aromatic spices.


Maintain consistency in taste, texture, and aroma while cooking in bulk quantities.


Handle dum cooking process, fire/heat management, and layering techniques.


Monitor ingredient quality, rice-water ratios, and cooking times for perfect output.


Train kitchen assistants in cutting, cleaning, marinating, and masala preparation.


Maintain hygiene, safety, and cleanliness across the kitchen.


Innovate with biryani varieties (kushka, chicken biryani, mutton biryani, combo with kabab) while staying true to Chennai tradition.


Ensure timely delivery during peak hours and special events.


Control wastage, manage stock, and maintain cost efficiency.



Requirements:


Proven expertise in Chennai style biryani preparation for restaurants, weddings, or large gatherings.


Strong knowledge of spice blends, rice quality, and authentic flavoring.


Ability to manage high-pressure kitchen envi

ronments with speed and accuracy.
