Job Description
The Production Manager will oversee end-to-end production operations across Aubree’s central kitchen(s), ensuring high-quality output of cakes, chocolates, and patisserie items. This role requires a strong leader who can manage teams, maintain quality benchmarks, optimise processes, and ensure seamless coordination between production, procurement, logistics, and outlets.
Key Responsibilities
1. Production Planning & Control
- Plan daily, weekly, and seasonal production schedules based on branch orders, festivals, and bulk requirements.
- Prioritise production tasks to meet delivery timelines.
- Ensure optimal utilisation of machinery, manpower, and raw materials.
2. Quality Assurance & Standards
- Maintain Aubree’s product quality, taste, design consistency, and hygiene standards.
- Conduct routine quality checks across all product categories—cakes, chocolates, bakery items, desserts.
- Collaborate with R&D/chef team to introduce new products and maintain SOPs.
3. Team Management
- Supervise production staff including chefs, decorators, helpers, packers, and cleaning staff.
- Manage shift allocations, attendance, and performance reviews.
- Train team members on processes, hygiene, safety, and consistency.
4. Inventory & Procurement Coordination
- Monitor stock levels of raw materials, packaging items, and consumables.
- Raise purchase requests and coordinate with the procurement team.
- Reduce wastage through better forecasting and inventory control.
5. Hygiene, Safety & Compliance
- Ensure compliance with FSSAI, HACCP, and internal hygiene guidelines.
- Monitor cleanliness of production area, equipment, cold rooms, and storage zones.
- Implement safety procedures for staff handling machines and baking equipment.
6. Operational Efficiency & Cost Control
- Improve production workflows for speed, efficiency, and consistency.
- Manage production costs, reduce wastage, and control man-hours.
- Track KPIs such as yield, wastage %, production accuracy, and on-time dispatches.
7. Coordination with Branches & Logistics
- Ensure smooth communication with branch managers for daily requirements.
- Monitor on-time dispatch, delivery schedules, and order accuracy.
- Handle urgent orders, custom cakes, and last-minute requirements effectively.
8. Reporting & Documentation
- Maintain production reports, daily output sheets, wastage logs, and batch records.
- Submit MIS reports to management regularly.
- Track equipment maintenance and breakdowns.
Qualifications & Experience
- Bachelor’s degree in Food Technology / Hotel Management / Bakery & Confectionery (preferred).
- 5+ years of experience in bakery/patisserie/chocolate or food production environment.
- Strong leadership and team-handling skills.
- Good understanding of production planning, quality control, and inventory management.
- Ability to work under pressure, especially during festivals and peak seasons.
