Job Description

We are looking for a Food Production Trainee / Production Cook with around 3 years of experience in hotel and restaurant cooking, including fast food and frozen food preparation. The candidate will support the production team in preparing, cooking, and packaging food items while ensuring quality, hygiene, and consistency in a fast‑paced environment.

Key Responsibilities

  • Assist in batch cooking and production of menu items in a commercial or hotel kitchen within set timelines.
  • Handle fast food and frozen food operations, including thawing, portioning, cooking, and plating as per SOPs.
  • Maintain stock and inventory of raw materials, semi‑cooked, and frozen items; coordinate with stores and purchasing.
  • Follow strict food safety, hygiene, and HACCP standards in production, storage, and handling.
  • Support new product trials and recipe standardization for fast food and frozen food lines under the Production Manager/Development Chef.
  • Clean and maintain kitchen equipment, workstations, and storage areas in line with sanitation and safety norms.
  • Contribute to cost control by minimizing wastage and optimizing yield during production.

Required Qualifications & Experience

  • Minimum 3 years of hands‑on experience in hotel or restaurant kitchen / food production, preferably in fast food or frozen ready‑to‑eat items.
  • Familiarity with batch cooking, line‑cooking, and standard kitchen operations in a hotel, restaurant, or catering setup.
  • Practical knowledge of handling frozen food, thawing procedures, and temperature control for food safety.
  • Diploma / ITI in Food Production / Cookery / Hotel Management or equivalent (preferred but not mandatory if experience is strong).
  • Basic understanding of food safety and hygiene practices (HACCP / FSSAI‑related practices).

Skills & Competencies

  • Strong knife skills and knowledge of basic cooking techniques (frying, grilling, baking, steaming, etc.).
  • Ability to work efficiently in a fast‑paced, high‑pressure environment and follow instructions.
  • Good teamwork and communication skills with kitchen staff and supervisors.
  • Attention to portion control, presentation, and consistency of dishes.
  • Basic numeracy and time‑management skills for production planning and batch preparation.

Preferred Attributes

  • Previous exposure to multi‑outlet hotel F&B, cloud kitchens, or FMCG / food manufacturing units (especially ready‑to‑eat or frozen food lines) is a plus.
  • Willingness to work in rotational shifts, including nights, weekends, and holidays as per business needs.
