Job Description: Bakery Chef (Production Unit Management)

Position: Bakery Chef / Production Head

Department: Production unit

Location: ekkatuthangal, chennai

Reports To: Operations Manager / Director

Job SummaryWe are seeking an experienced Bakery Chef to oversee daily production operations in a centralized bakery unit. The role involves managing large-scale production, ensuring product consistency, maintaining quality standards, and leading the production team efficiently.

Key Responsibilities1. Production Management

  • Plan and execute daily bakery production (bread, cakes, pastries, desserts, etc.)
  • Ensure timely production as per demand, orders, and dispatch schedules
  • Monitor batch production, yield, and wastage control

2. Team Handling

  • Supervise and train bakery staff, helpers, and production team
  • Allocate duties and manage shift planning
  • Maintain discipline, hygiene, and teamwork in the production unit

3. Quality Control

  • Ensure consistency in taste, texture, and presentation
  • Implement standard recipes (SOPs) and maintain quality benchmarks
  • Conduct regular quality checks on raw materials and finished goods

4. Inventory & Cost Control

  • Manage raw material inventory (flour, yeast, butter, etc.)
  • Coordinate with procurement for stock availability
  • Control wastage and optimize production cost

5. Hygiene & Safety

  • Ensure compliance with food safety standards (FSSAI guidelines)
  • Maintain cleanliness and sanitation in the production area
  • Enforce personal hygiene and safety protocols for staff

6. Equipment & Maintenance

  • Oversee usage and maintenance of bakery equipment (ovens, mixers, etc.)
  • Coordinate with maintenance team for repairs and servicing

7. Innovation & Menu Development

  • Develop new recipes and improve existing products
  • Keep track of market trends and customer preferences
  • RequirementsProven experience as a Bakery Chef / Head Baker (3–8 years preferred)
  • Experience in large-scale or central kitchen production
  • Strong knowledge of bakery techniques, ingredients, and equipment
  • Leadership and team management skills
  • Basic understanding of costing and inventory management
  • Ability to work under pressure and meet deadlines
  • Preferred QualificationsDiploma / Certification in Bakery & Confectionery
  • Experience in FMCG / Cloud Kitchen / Production Units
