Job Description

Job SummaryThe Store & Purchase Manager is responsible for managing all procurement, inventory, and store operations of the restaurant. This role ensures the right quality and quantity of materials are procured at the best cost, inventory is accurately maintained, and stock levels are optimized to support smooth restaurant operations.

  • Key Responsibilities📌 Procurement & PurchasingSource, evaluate, and select reliable suppliers for F&B items, beverages, and restaurant supplies.
  • Negotiate pricing, payment terms, delivery schedules, and contracts with vendors.
  • Place purchase orders (POs) based on par levels and forecasted needs.
  • Ensure timely receiving of goods, checking for quality and quantity compliance.
  • 📌 Inventory ManagementMaintain daily, weekly, and monthly inventory records for all stock items.
  • Conduct physical stock counts and reconcile with system records.
  • Identify and address stock discrepancies, pilferage, or wastage.
  • Establish and monitor par levels and reorder points.
  • 📌 Store OperationsMaintain proper storage conditions (FIFO method), cleanliness, and safety in store areas.
  • Ensure proper labeling, dating, and rotation of stock.
  • Maintain store registers, bin cards, and stock movement sheets.
  • Ensure compliance with food safety and hygiene standards (HACCP / local norms).
  • 📌 Cost Control & ReportingMonitor costing of all purchases and implement cost-saving initiatives.
  • Prepare purchase and inventory cost reports for management review.
  • Assist in budgeting and cost forecasting.
  • Track supplier performance and pricing trends.
  • 📌 Coordination & ComplianceCoordinate regularly with Kitchen, Bar, and FOH teams to anticipate inventory needs.
  • Escalate issues of shortages, damages, or delays to management timely.
  • Ensure all procurement processes comply with company policies and regulations.
  • Required Skills & CompetenciesStrong negotiation and supplier relationship management skills.
  • Excellent analytical and numerical skills.
  • Good understanding of F&B operations and perishables handling.
  • Knowledge of inventory software / POS / ERP systems.
  • Strong organizational and multitasking ability.
  • High level of integrity and ethical standards.
  • Experience & QualificationsBachelor’s degree in Business, Supply Chain, Hospitality, or related field (preferred).
  • 3–7+ years experience in procurement, inventory, or store management (restaurants / hotels preferred).
  • Experience with restaurant purchasing systems / stock management tools.
