Job Description

  1. Role Title - Microbiologist – Food Industry
  2. Minimum Experience - Minimum 2 Years in Food / FMCG Manufacturing
  3. Department - Quality Assurance / Quality Control
  4. Reporting To - QA Manager / Factory Head
  5. Role Objective - To independently manage microbiological quality, ensure food safety compliance, and prevent contamination across raw materials, process, and finished goods.
  6. Raw Material Testing - Conduct microbiological testing of raw materials, water, and packaging materials as per standards.
  7. In-Process Testing - Perform routine microbiological analysis of in-process samples to ensure process hygiene and control.
  8. Finished Product Testing - Test finished goods for TPC, Yeast & Mold, Coliforms, and pathogens as applicable.
  9. Product Release Authority - Approve or place products on hold based on microbiological compliance.
  10. Hygiene Monitoring - Monitor GMP, GHP, GLP and personal hygiene practices on the production floor.
  11. Swab & Environmental Testing - Conduct swab tests of hands, equipment, surfaces, air, and water; analyze and trend results.
  12. Environmental Monitoring Program - Implement and maintain an environmental monitoring plan and identify risk zones.
  13. Shelf-Life Studies - Conduct microbiological shelf-life and stability studies for existing and new products.
  14. Deviation Handling - Investigate microbiological failures and deviations using root cause analysis.
  15. CAPA Implementation - Recommend, implement, and verify corrective and preventive actions.
  16. Documentation - Maintain lab records, test reports, media logs, calibration records, and SOP compliance.
  17. Audit Support - Support FSSAI, customer, and internal audits; ensure audit readiness at all times.
  18. Regulatory Compliance - Ensure compliance with FSSAI Schedule 4 and internal food safety standards.
  19. Training - Train production and sanitation staff on hygiene, GMP, and food safety awareness.
  20. Cross-Functional Coordination - Coordinate with Production, QA, and R&D teams for quality and new product support.
  21. Continuous Improvement - Suggest improvements in sanitation, testing frequency, and microbiological controls.
  22. Authority Level - Authority to reject raw materials or finished goods and recommend line stoppage if required.
  23. Qualification - B.Sc / M.Sc in Microbiology / Food Science / Biotechnology
  24. Key Skills - Microbiological testing, GMP, HACCP, documentation, audit handling, problem solving
