Job Description
- Role Title - Microbiologist – Food Industry
- Minimum Experience - Minimum 2 Years in Food / FMCG Manufacturing
- Department - Quality Assurance / Quality Control
- Reporting To - QA Manager / Factory Head
- Role Objective - To independently manage microbiological quality, ensure food safety compliance, and prevent contamination across raw materials, process, and finished goods.
- Raw Material Testing - Conduct microbiological testing of raw materials, water, and packaging materials as per standards.
- In-Process Testing - Perform routine microbiological analysis of in-process samples to ensure process hygiene and control.
- Finished Product Testing - Test finished goods for TPC, Yeast & Mold, Coliforms, and pathogens as applicable.
- Product Release Authority - Approve or place products on hold based on microbiological compliance.
- Hygiene Monitoring - Monitor GMP, GHP, GLP and personal hygiene practices on the production floor.
- Swab & Environmental Testing - Conduct swab tests of hands, equipment, surfaces, air, and water; analyze and trend results.
- Environmental Monitoring Program - Implement and maintain an environmental monitoring plan and identify risk zones.
- Shelf-Life Studies - Conduct microbiological shelf-life and stability studies for existing and new products.
- Deviation Handling - Investigate microbiological failures and deviations using root cause analysis.
- CAPA Implementation - Recommend, implement, and verify corrective and preventive actions.
- Documentation - Maintain lab records, test reports, media logs, calibration records, and SOP compliance.
- Audit Support - Support FSSAI, customer, and internal audits; ensure audit readiness at all times.
- Regulatory Compliance - Ensure compliance with FSSAI Schedule 4 and internal food safety standards.
- Training - Train production and sanitation staff on hygiene, GMP, and food safety awareness.
- Cross-Functional Coordination - Coordinate with Production, QA, and R&D teams for quality and new product support.
- Continuous Improvement - Suggest improvements in sanitation, testing frequency, and microbiological controls.
- Authority Level - Authority to reject raw materials or finished goods and recommend line stoppage if required.
- Qualification - B.Sc / M.Sc in Microbiology / Food Science / Biotechnology
- Key Skills - Microbiological testing, GMP, HACCP, documentation, audit handling, problem solving
