Job Summary:

The Chef de Partie – Oriental Cuisine is responsible for managing a specific section of the kitchen specializing in Oriental dishes such as Chinese, Thai, Japanese, and Pan-Asian cuisine. The role ensures high food quality, consistency, hygiene standards, and smooth kitchen operations.

Key Responsibilities:

Prepare and cook Oriental dishes as per standard recipes and presentation guidelines

Manage the Oriental section independently during service

Ensure food quality, taste, portion control, and consistency

Supervise and guide Commis Chefs and kitchen helpers

Maintain high standards of hygiene and food safety (HACCP)

Assist in menu planning, new dish development, and food trials

Monitor stock levels and place requisitions on time

Minimize food wastage and control food cost

Ensure proper storage and labeling of raw and cooked food

Follow SOPs and kitchen safety standards at all times

Skills & Requirements:

Proven experience as a CDP – Oriental / Chinese / Pan-Asian

Strong knowledge of sauces, wok cooking, and Oriental ingredients

Ability to work under pressure during busy service hours

Good communication and team management skills

Knowledge of food safety and hygiene practices

Flexible to work in shifts

Qualification & Experience:

Culinary diploma or equivalent qualification preferred

Minimum 2–4 years of experience in Oriental cuisine

Hotel or fine-dining restaurant experience is an advantage
