Job Description

Ridiculusum F&B Pvt Ltd is looking to hire an experienced Chinese / Pan-Asian Head Chef to lead bulk production operations at our central kitchen.

The role requires deep expertise in authentic Chinese & Pan-Asian cuisines, standardized bulk cooking, and cold chain & shelf-life management for multi-location supply.


This position is critical for maintaining taste consistency, food safety, cost efficiency, and scalable production across our brands.



Key Responsibilities


🔹 Production & Kitchen Operations

• Oversee bulk production of Chinese & Pan-Asian gravies, sauces, marinades, broths, and semi-finished products.

• Design standardized recipes (SOPs) for central kitchen production and outlet-level finishing.

• Plan batch cooking, yield control, and production cycles to meet daily & weekly demand.

• Maintain taste consistency across all outlets.


🔹 Cold Chain & Food Safety

Manage cold chain processes including chilling, freezing, storage, thawing, and dispatch.

• Define and monitor shelf life, storage temperature, and handling SOPs.

• Ensure compliance with FSSAI, hygiene, and food safety standards.

• Implement FIFO, traceability, and wastage control systems.


🔹 Menu & R&D

• Develop scalable Pan-Asian menu components suitable for bulk production.

• Optimize recipes for cost, shelf life, and transport stability without compromising quality.

• Innovate new sauces, spice blends, and ready-to-cook components.


🔹 Team & Process Management

Train kitchen staff on SOPs, hygiene, and production discipline.

• Coordinate with operations, procurement, and logistics teams.

• Monitor raw material quality, vendor consistency, and inventory planning.


🔹 Cost & Efficiency Control

Control food cost, portioning, and raw material usage.

• Reduce wastage through better planning and process optimization.

• Assist management in pricing, costing, and scaling strategy.




Required Skills & Experience

3+ years experience in Chinese / Pan-Asian cuisine.

Prior experience in central kitchen / commissary / cloud kitchen / QSR model preferred.

• Strong understanding of:

Bulk cooking techniques

• Cold chain & frozen / chilled food handling

• Shelf-life extension (without preservatives misuse)

• Hands-on experience with gravies, sauces, stir-fries, noodles, rice, dimsums (preferred).

• Knowledge of FSSAI food safety & hygiene protocols.

• Ability to work in a fast-scaling, process-driven environment.



Preferred Background

Worked with QSR chains, cloud kitchens, or multi-outlet brands.

• Experience supplying food from central kitchen to multiple locations.

• Exposure to cost optimization and standardization projects.
