Job Description
We are looking to hire an experienced Biryani Chef to lead bulk production operations at our central kitchen.
The role requires deep expertise in authentic biryani techniques (Dum, Kacchi, Pakki styles), standardized bulk cooking, and cold chain & shelf-life management for multi-location supply.
This position is critical for maintaining taste consistency, food safety, cost efficiency, and scalable production across our brands.
Key Responsibilities
🔹 Production & Kitchen Operations
• Oversee bulk production of biryanis (Chicken, Mutton, Veg, Special variants), gravies, kormas, marinades, masalas, and semi-finished products.
• Design standardized recipes (SOPs) for central kitchen production and outlet-level finishing.
• Plan batch cooking, rice par-cooking ratios, dum process, yield control, and production cycles.
• Ensure consistency in aroma, spice balance, texture, and portioning across outlets.
🔹 Cold Chain & Food Safety
• Manage chilling, freezing, storage, thawing, and dispatch protocols.
• Define and monitor shelf life for rice, gravies, and protein components.
• Ensure compliance with FSSAI hygiene and food safety standards.
• Implement FIFO, traceability, wastage control, and contamination prevention systems.
🔹 Menu & R&D
• Develop scalable biryani recipes suitable for bulk production without compromising authenticity.
• Optimize spice blends, marinades, and gravy bases for cost efficiency and shelf stability.
• Innovate new variants (regional styles – Hyderabadi, Lucknowi, Kolkata, etc.).
• Standardize ready-to-assemble biryani kits for outlet-level finishing.
🔹 Team & Process Management
• Train kitchen staff on SOP adherence, hygiene, and batch discipline.
• Coordinate with procurement for rice quality, meat quality, spices, and vendor consistency.
• Plan inventory and raw material usage efficiently.
• Ensure disciplined production scheduling.
🔹 Cost & Efficiency Control
• Control food cost via accurate portioning & yield management.
• Monitor rice-to-protein ratios and reduce over-portioning.
• Minimize wastage during marination, cooking, and packing.
• Assist management in pricing and scaling strategy.
Preferred Background
• Experience working with biryani chains or multi-outlet brands.
• Experience supplying from central kitchen to multiple locations.
• Exposure to cost optimization and SOP-driven kitchen models.
