Restaurant Captain

Role Summary:

Captains at Novy lead sections of the dining room, ensuring service coordination, menu knowledge consistency, and polished guest experience. They act as the bridge between the kitchen, beverage program, and service staff, championing Novy’s ingredient- and technique-driven identity.

Key Responsibilities:

• Oversee service flow, pacing, and guest needs across a designated section.
• Manage VIP tables, complex dietary cases, tasting menu pacing, and beverage pairing discussions.
• Uphold Novy’s storytelling standards for ingredients, sourcing, fermentation, preservation, and techniques.
• Conduct or support pre-shift briefings on menu changes, seasonal sourcing, new techniques, and pairings.
• Mentor servers, runners, and support staff on etiquette, mise en place, guest engagement, and menu knowledge.
• Resolve guest concerns with discretion, warmth, and confidence.
• Maintain service standards aligned with Gurgaon’s fine dining expectations and Novy’s own philosophy.

Requirements:

• Demonstrated leadership in fine dining, boutique gastronomy, or premium hotel restaurants (NCR experience a strong plus).
• Advanced understanding of culinary techniques, Indian and global produce sourcing, and beverage fundamentals.
• Strong communication, emotional intelligence, and training abilities.
• Ability to balance precision and warmth, adapting to Gurgaon’s diverse guest profiles (corporate, celebratory, and culinary-driven).
• English fluency required; Hindi proficiency beneficial.
