1. To assist the Restaurant Manager in managing the day to day operations of the restaurant 2. To relieve the restaurant manager on his day off and assume the duties and responsibilities of the Restaurant Manager in his/her absence. 3. To control and analyze on an ongoing basis, the level of the following – a. Sales b. Cost c. Quality and presentation of food and beverage products d. Service Standard e. Condition and cleanliness facilities and equipment f. Quality of entertainment g. Guest satisfaction h. Marketing & PR 4. Establish and maintain effective employee and inter - departmental working relationships. 5. To assist the Restaurant Manager in functions such as interviewing, hiring, and performance evaluation, coaching, counseling and taking disciplinary actions to ensure the appropriate staff productivity and efficiency. 6. To assist the Restaurant Manager in developing training materials in accordance with Company guidelines and implements training plans. 7. To assist Restaurant Manager in expounding and maintaining an up-dated operations manual for the restaurant. 8. Assist Restaurant Manager in keeping updated file on all restaurant matters. 9. To conducts daily briefings and other meetings as needed to obtain optimal results. 10.To participate in service as necessary in accordance with the requirements and practices of the restaurant. 11. Assisting Restaurant Manager in setting goals and developing strategies, procedures and policies. 12. Assisting Restaurant Manager in preparing the yearly Food &Beverage division budget. 13. Monitor the stocks of all food, beverage, material and equipment and ensures that service requirement are met. 14. Monitors local competitors and compare their operation with his/her restaurant. 15. Keeps aware of trends, systems, practice and equipment in food and beverage through trade literature, hotel show and site visits. 16. Performs related duties and special projects as assigned.
