Job Description

A South Indian Chef de Partie (CDP) in a hotel or restaurant setting is responsible for overseeing the preparation and cooking of various South Indian dishes, ensuring consistent quality and adherence to established standards. They manage a specific section of the kitchen, such as the tandoor, dosa, or curry station, and supervise junior staff. Their duties include maintaining hygiene standards, managing food costs, and contributing to menu development. 


Key Responsibilities of a South Indian CDP:

  • Food Preparation and Cooking:
  • Prepare and cook a wide range of South Indian dishes according to recipes and quality standards. 
  • Section Management:
  • Manage a specific section of the kitchen, such as the dosa station, tiffin section, or curry station. 
  • Supervision and Training:
  • Supervise and train junior kitchen staff, including commis chefs and kitchen assistants. 
  • Hygiene and Safety:
  • Maintain strict hygiene and safety standards in the kitchen, ensuring food is prepared and stored correctly. 
  • Quality Control:
  • Ensure consistent quality and presentation of dishes, including proper portioning and garnishing. 
  • Menu Management:
  • Assist in menu planning, including the development of new dishes and specials. 
  • Stock Management:
  • Monitor food stock levels, place orders as needed, and manage inventory to minimize waste. 
  • Cost Control:
  • Control food costs by adhering to recipes and portion sizes. 
  • Teamwork:
  • Collaborate effectively with other kitchen staff and front-of-house personnel to ensure smooth service. 
  • Equipment Maintenance:
  • Ensure all kitchen equipment is properly maintained and report any malfunctions. 
  • Guest Satisfaction:
  • Contribute to a positive dining experience by ensuring high-quality food and service. 
  • Communication:
  • Communicate effectively with team members, including reporting on food preparation and any issues that arise.
