Job Description – Commi 3 (Chinese / Tandoor) & Commi 1 (Tandoor)Job SummaryThe Commi is responsible for assisting in the preparation and cooking of dishes in the assigned section (Chinese or Tandoor). The role includes supporting senior chefs, maintaining food quality, ensuring kitchen hygiene, and following operational standards. Commi 1 is responsible for handling the section with greater responsibility and supervising junior staff when required.

• Key ResponsibilitiesFood PreparationAssist in preparation of ingredients including cutting, chopping, marination, and mise en place.
• Prepare Chinese dishes such as noodles, fried rice, sauces, and appetizers as per standard recipes.
• Assist in preparation of tandoor items such as naan, roti, kebabs, and tikkas.
• Ensure proper portioning and presentation of dishes.
• Tandoor OperationsAssist in operating the tandoor oven and maintaining appropriate cooking temperature.
• Prepare marinades and marinate meats, paneer, and vegetables.
• Cook tandoor breads and kebabs while maintaining quality and consistency.
• Commi 1 will independently manage the tandoor section during service.
• Kitchen OperationsFollow instructions from senior chefs or kitchen supervisors.
• Maintain cleanliness and organization of the work station.
• Ensure proper storage of ingredients and follow FIFO practices.
• Assist in opening and closing kitchen duties.
• Hygiene & Food SafetyMaintain high standards of hygiene and food safety in the kitchen.
• Ensure all utensils, equipment, and work areas are clean and sanitized.
• Follow company SOPs and operational standards.
• Team SupportWork collaboratively with kitchen staff to ensure smooth kitchen operations.
• Commi 1 may guide and support junior staff such as Commi 2 or Commi 3.

Experience & RequirementsCommi 3 (Chinese / Tandoor)

• 0 – 2 years experience in restaurant or hotel kitchen.
• Basic knowledge of Chinese cooking or tandoor preparation.
• Willingness to learn and work in a fast-paced environment.

Commi 1 (Tandoor)

• 3 – 5 years experience in tandoor section.
• Strong knowledge of tandoor cooking and marination techniques.
• Ability to handle the section independently during service.
