Tandoor Cook

We are seeking an experienced and skilled Tandoor Cook to manage all tandoor operations, ensuring authentic flavors, consistent quality, and timely preparation of tandoor dishes. The ideal candidate should have strong knowledge of marination, charcoal temperature control, and traditional tandoor cooking techniques.

• Key ResponsibilitiesPrepare and cook all tandoor items including kebabs, tikkas, tandoori chicken, naan, rotis, and specialty breads.
• Prepare and marinate meats, seafood, paneer, and vegetables as per standard recipes.
• Operate and maintain the tandoor oven, ensuring correct charcoal heat and cooking temperatures.
• Ensure consistency in taste, texture, and presentation of dishes.
• Monitor food stock levels for the tandoor section and inform management of shortages.
• Maintain high standards of hygiene, cleanliness, and food safety in the workstation.
• Minimize wastage and follow proper portion control.
• Coordinate with kitchen team for smooth service during peak hours.
• Follow restaurant recipes and plating standards strictly.
• Assist in developing new tandoor dishes when required.

Requirements

Proven experience as a Tandoor Cook in a restaurant or hotel.

Strong knowledge of Indian spices, marinades, and tandoor cooking methods.

Ability to handle high-pressure service periods.

Knowledge of food safety and hygiene practices.

Physically fit to work near high-heat cooking equipment.

Team player with good time management skills.

Preferred Qualifications

2+ years experience in a tandoor section.

Experience with charcoal and gas tandoors.

Knowledge of multi-cuisine grilling is a plus.
