About the Role
We are seeking a chef who deeply understands the richness of South Indian cuisine and can present it in a refined, contemporary format. The role focuses on honoring traditional culinary roots from Tamil Nadu, Kerala, Karnataka, and Andhra while evolving them for modern dining environments.
This position requires balancing authenticity with innovation, ensuring traditional flavors are preserved while improving presentation, format, and scalability.
Key Responsibilities
• Lead research and development for South Indian cuisine–focused concepts
• Create modern interpretations of traditional dishes
• Refine gravies, spice blends, batters, and fermentation techniques
• Standardize recipes for consistency across multiple outlets
• Collaborate with pastry and bakery teams on cross-cuisine innovation
• Source authentic regional ingredients and suppliers
• Lead tastings and continuous refinement of dishes
Requirements
• Strong expertise in South Indian culinary traditions
• Hands-on experience with dosa, idli, appam, uttapam, podi, chutneys, and various sambar styles
• Solid understanding of fermentation and batter development
• Ability to modernize presentation while preserving authentic flavors
• Strong palate and understanding of spice balance
• Structured and disciplined kitchen operations approach
