Job Title: Sous Chef – Indian Cuisine Job Summary We are seeking an experienced Indian Sous Chef to support the Executive Chef in managing kitchen operations, ensuring food quality, consistency, and smooth service. The candidate should be strong in traditional and regional Indian cooking with good team-handling skills.

  • Key Responsibilities Assist the Executive Chef in daily kitchen operations
  • Prepare and supervise Indian cuisine (North/South/Regional as per menu)
  • Maintain consistency in taste, portioning, and presentation
  • Manage kitchen staff, duty rosters, and daily briefings
  • Control food cost, wastage, and inventory
  • Ensure compliance with food safety and hygiene standards (FSSAI)
  • Train and guide junior kitchen staff
  • Requirements5–8 years of experience in Indian cuisine
  • Minimum 2+ years as Sous Chef or Senior CDP
  • Strong knowledge of gravies, curries, tandoor, and regional dishes
  • Good leadership and basic English communication skills

  • Handle wok stations, sauces, stir-fries, noodles, and rice
  • Ensure speed, consistency, and quality during service
  • Supervise kitchen staff and manage daily operations
  • Control food cost, wastage, and stock usage
  • Maintain hygiene and food safety standards (FSSAI/HACCP)
  • Train commis and junior chefs
  • Requirements5–8 years of experience in Chinese cuisine
  • Minimum 2+ years as Sous Chef or Senior CDP
  • Strong wok-handling and high-flame cooking skills
  • Experience in high-volume or premium restaurants
  • Fair English communication preferred
  • Qualification (For Both Roles Diploma / Degree in Hotel Management (preferred)
  • Relevant hands-on experience will be considered
