Job Description

  • Key Responsibilities1. Procurement & Vendor ManagementSource and develop reliable vendors for food, beverages, packaging, housekeeping, and consumables.
  • Negotiate pricing, credit terms, and contracts to achieve cost savings.
  • Maintain an approved vendor list and review vendor performance regularly.
  • Ensure alternate vendors for all critical items.
  • 2. Cost Control & BudgetingMonitor market prices and control purchase costs.
  • Compare quotations and ensure best value for money.
  • Support finance in budgeting and cost analysis.
  • Track price variance and report to management.
  • 3. Inventory & Stock ManagementCoordinate with stores and outlet managers to maintain optimum stock levels.
  • Avoid overstocking, stock-outs, and wastage.
  • Ensure FIFO/FEFO is followed (especially for perishables).
  • Conduct monthly stock audits with the store team.
  • 4. Purchase Process & DocumentationRaise and process Purchase Orders (POs).
  • Ensure proper GRN (Goods Received Notes) and invoice matching.
  • Maintain accurate purchase records and documentation.
  • Ensure all purchases are approved as per company SOP.
  • 5. Quality & ComplianceEnsure quality standards for all materials received.
  • Coordinate with chefs and operations for product specifications.
  • Ensure food safety and FSSAI compliance for vendors.
  • Handle rejections, returns, and quality issues.
  • 6. Inter-Department CoordinationWork closely with:

  • Chefs (menu requirements)
  • Store team (inventory)
  • Finance (payments, budgeting)
  • Operations (forecasting demand)
