Job Description
- 1. Kitchen Operations ManagementOversee daily kitchen operations across all outlets
- Ensure consistency in food quality, taste, and presentation
- Maintain standard recipes and portion control
- Supervise food preparation and service during peak hours
- 2. Menu Planning & DevelopmentDesign and update menus based on market trends and customer preferences
- Introduce seasonal and innovative dishes
- Standardize recipes and costing for all menu items
- 3. Cost Control & Inventory ManagementMonitor food cost and maintain target margins
- Control wastage and optimize resource utilization
- Manage inventory, ordering, and vendor coordination
- Conduct regular stock audits
- 4. Team Leadership & TrainingHire, train, and supervise kitchen staff
- Create duty rosters and manage shift planning
- Maintain discipline and motivate the team
- Conduct regular training sessions on food quality and hygiene
- 5. Hygiene & ComplianceEnsure strict adherence to food safety and hygiene standards (FSSAI norms)
- Maintain cleanliness of kitchen and storage areas
- Implement SOPs for food handling and storage
- 6. Vendor & Purchase ManagementIdentify and negotiate with suppliers
- Ensure quality procurement at competitive prices
- Maintain relationships with vendors
- 7. Coordination with ManagementWork closely with F&B and operations team
- Support in events, banquets, and special functions
- Provide regular reports on kitchen performance
