Job Description: Production Manager – Central Kitchen (Core Team)
About Bangalore Canteen
Bangalore Canteen is a fast-growing QSR brand bringing the bold and nostalgic food
culture of Bengaluru to Pune. From Ghee Pudi Masala Dosas and Thatte Idlis to our
signature Filter Coffee Soft Serve, we are building a brand rooted in authenticity,
consistency, and quality.
With a growing footprint across multiple outlets, we are strengthening our central kitchen
operations to ensure scalable, standardized, and high-quality production.
Role Overview
We are hiring a Production Manager to lead and manage operations at our Central
Kitchen. This is a core team role responsible for ensuring:
• Efficient production
• Consistent quality
• Strict compliance with food safety standards
The primary objective of this role is to build a reliable, scalable, and process-driven
production system that supports all outlets seamlessly.
Key Responsibilities
1. Production Planning & Execution
• Plan and oversee daily production based on outlet demand forecasts
• Ensure timely preparation and dispatch of all food items
• Maintain consistency in taste, quality, and portioning across batches
• Minimize wastage and optimize resource utilization
2. Operations Management
• Streamline central kitchen workflows for maximum efficiency
• Monitor inventory levels and coordinate with procurement
• Ensure proper storage, handling, and movement of raw materials and finished
foods• Implement and maintain Standard Operating Procedures (SOPs)
3. Quality Control & Food Safety
• Ensure strict adherence to FSSAI guidelines and food safety standards
• Monitor hygiene, sanitation, and cleanliness across the facility
• Conduct regular quality checks for raw materials and finished products
• Maintain proper documentation and compliance records
4. Team Leadership
• Lead and manage kitchen staff, supervisors, and helpers
• Train team members on SOPs, hygiene standards, and production processes
• Ensure discipline, accountability, and smooth coordination within the team
• Build a culture of consistency, efficiency, and ownership
5. Process Improvement & Scaling
• Identify gaps in production and implement improvements
• Standardize recipes and processes for scalability
• Work closely with the Founder and operations team on expansion readiness
• Ensure the central kitchen can support increasing outlet demand
Skills & Qualifications
• Degree/Diploma in Food Technology or related field
• Proven experience in food production, central kitchen, or manufacturing
operations (QSR/F&B preferred)
• Strong understanding of FSSAI regulations, hygiene standards, and
compliance requirements
• Experience in production planning, inventory management, and process
optimization
• Strong leadership and team management capabilities
• Management education (MBA or equivalent) is an added advantage
Candidate Profile
• Based in Pune and available for a full-time, on-site role
• Highly organized and detail-oriented
• Ability to work in a structured, process-driven environment
• Strong ownership mindset with a focus on quality and efficiency
• Prior experience in scaling kitchen or food production operations is preferred
