Job Description

  1. Strong South Indian cuisine experience (non-negotiable)
  2. Minimum 5 years hands-on experience with core South Indian items — dosa, idli, vada, sambar, chutneys. Must understand batters, tempering, and consistency deeply.
  3. Execution-first mindset
  4. This is not a creative role. Must believe that consistency, discipline, and repetition are the highest form of excellence.
  5. Experience in structured, SOP-driven kitchens
  6. Should be comfortable following recipes, premix systems, portion controls, and hygiene SOPs without deviation.
  7. Ownership of food quality at outlet level
  8. Must take full responsibility for taste, portioning, hygiene, and food safety for one outlet, every day.
  9. Strong kitchen discipline and hygiene standards
  10. Zero tolerance for shortcuts. Cleanliness, storage norms, and food safety must be instinctive.
  11. People and station-level training capability
  12. Able to train commis, cooks, and helpers. Can certify team members before independent station handling.
  13. Calm leadership during peak hours
  14. Should be steady, organised, and in control during rush periods. No panic, no chaos.
  15. Food cost and wastage awareness
  16. Understands portion control, yield discipline, and wastage reduction at a practical level.
  17. Comfort working with FOH and Ops teams
  18. Should coordinate smoothly with Restaurant Manager and Area Manager for daily operations and service flow.
  19. Mobility and long-term mindset
  20. Willing to work outside South India and open to relocation as the brand expands. Looking for stability and growth, not a short-term role.
