Tandoor Chef (Specialist Role)Role Overview

The Tandoor Chef will specialize in handling all tandoor operations, ensuring perfectly cooked breads and proteins while maintaining consistency, speed, and quality during service.

Key Responsibilities

·        Tandoor Operations

·        Operate and manage tandoor efficiently during prep and service

·        Prepare naans, rotis, kulchas, kebabs, tikka, and grilled items

·        Maintain correct tandoor temperature and fire management

·        Food Quality

·        Ensure proper marination and resting of meats and vegetables

·        Maintain consistency in texture, char, and seasoning

·        Avoid undercooking or overcooking during service

·        Prep & Mise-en-Place

·        Prepare marinades, skewers, and portioning

·        Maintain stock of tandoor doughs and pre-prep items

·        Coordinate with Indian chef for service timing

·        Hygiene & Safety

·        Maintain cleanliness of tandoor area

·        Follow safe handling of fire and equipment

·        Ensure all food safety standards are met

Requirements

2–3 years experience as a Tandoor Chef

Strong knowledge of charcoal

Skilled in naans and kebab execution

Ability to handle high-volume service

Preferred

Experience in restaurant dining or café formats

Knowledge of modern plating for kebabs and starters

Ability to multitask and coordinate with kitchen team
