**📌 JOB ROLE & RESPONSIBILITIES – KITCHEN MANAGER (South Indian Veg Restaurant) **

Dear Candidate,

Please find the key responsibilities for the Kitchen Manager position:

👨‍🍳 Core Kitchen Operations • Oversee day-to-day kitchen functioning

• Ensure authentic South Indian taste & consistency across all dishes

• Maintain recipe standards, portion sizes & food presentation

• Monitor dosa, idli, chutney, sambar sections for speed & quality

🧑‍🏫 Staff Management • Manage team of cooks, helpers & utility staff

• Conduct daily briefings & training (hygiene, speed, taste)

• Make weekly duty roster & ensure proper shift planning

📦 Inventory & Purchase • Daily stock checking – vegetables, milk, coconut, masalas, batter, ghee, butter

• Maintain par stock for peak hours

• Coordinate with purchase team for timely ordering

• Control wastage & ensure FIFO method

🧼 Hygiene & Safety • Ensure kitchen follows FSSAI standards

• Maintain cleaning checklist for tawa, steamers, grinders, refrigerators

• Monitor pest control, deep cleaning & sanitisation

📊 Cost & Systems • Maintain daily consumption reports

• Control food cost & reduce wastage

• Monitor Petpooja KDS timings & ensure orders are punched/closed properly

• Check that food is marked “ready” on time for delivery orders

🍽️ Guest Experience • Ensure speed of service

• Handle special requests & complaints related to taste/quality

• Maintain best-in-class freshness for dosa batter, idli batter & chutneys

🛠️ Equipment & Maintenance • Daily health check of dosa tawa, idli steamers, grinders, refrigeration

• Report breakdowns immediately

• Maintain AMC logs & cleaning schedules

📈 Performance • Achieve food cost targets

• Maintain consistency even on high-volume days

• Train backups for critical positions
