Job Description

Position Overview:

Jassi & Co. is looking for a highly capable Executive Chef cum Manager who can seamlessly balance kitchen leadership and overall restaurant management. This role demands a hands-on professional who owns food quality, people, costs, and guest experience end-to-end, ensuring smooth daily operations while upholding brand standards.

Key Responsibilities – Kitchen (Chef Role):

  • Lead complete kitchen operations including food quality, taste consistency, hygiene, and presentation.
  • Execute and maintain standardized recipes, portion controls, plating SOPs, and production workflows.
  • Train, supervise, and discipline kitchen staff; build a skilled, accountable team.
  • Ensure strict compliance with food safety, hygiene, FSSAI norms, and internal audits.
  • Control food cost, wastage, inventory levels, vendor coordination, and procurement planning.
  • Support menu trials, seasonal innovations, and cost engineering in coordination with management.
  • Oversee daily restaurant operations including service flow, staff deployment, discipline, and guest handling.
  • Coordinate between kitchen, service, bar, and cashier teams for smooth operations.
  • Monitor overall P&L drivers: food cost, manpower cost, utilities, and operational efficiency.
  • Handle customer feedback, complaints, and resolutions with a guest-first mindset.
  • Ensure SOP compliance across service, hygiene, opening/closing procedures, and audits.
  • Manage staff attendance, rosters, training logs, and performance reviews.
  • Act as the single point of accountability for outlet performance.

Required Skills & Qualifications:

  • Proven experience as Executive Chef / Head Chef with added exposure to restaurant or outlet management.
  • Strong command over Indian cuisine with an understanding of contemporary and health-focused preparations.
  • Excellent leadership, multitasking, and decision-making abilities.
  • Strong understanding of costing, inventory control, manpower planning, and operations.
  • Required Strong skills in Computer Handling/ Digital Technology (MS Excel, POS system).
  • Ability to lead from the front during peak hours and pressure situations.
  • Diploma/Degree in Culinary Arts or Hotel Management preferred (experience may substitute).
