Job Title: Head Chef – Indian Sweets & Desserts (Modern Retail Focus) 


Department: Kitchen Operations – Sweets & Desserts

Location:Milan Caterers, S 20/52, A-K, Nepali Kothi , Varuna Bridge (Near Hotel Surya) Cantonment, Varanasi, BanAroma (Central Production / Flagship Outlet)


Reporting To: Culinary Director / Founder / Operations Head


Role Overview BanAroma is building a contemporary, premium interpretation of Indian sweets and desserts for modern retail. We are looking to hire a Head Chef – Sweets & Desserts who can lead the creation, execution, and presentation of traditional Indian mithai, modern Indian desserts, and controlled fusion formats, with strong emphasis on visual appeal, consistency, and retail scalability.


Key Responsibilities


Product Development & Culinary Leadership


• Design and execute traditional, modern, and fusion Indian desserts

• Develop signature BanAroma dessert IPs

• Balance authenticity with modern textures and plating


Traditional Indian Sweets Expertise


• Mastery over khoya, chenna, mawa, rabri, malai techniques

• Sugar syrup control and shelf-life optimization

• Standardization of traditional recipes


Modern & Fusion Dessert Understanding

• Experience with contemporary reinterpretations of Indian sweets

• Strong judgment on fusion vs authenticity


Presentation & Display Counter Excellence

• Display counter arrangement and visual merchandising

• Portion uniformity and premium presentation

• Training counter staff on handling and plating


Standardisation & Process Control

• SOP creation and batch consistency

• Yield, wastage, and scalability control


Team Leadership & Training

• Build and manage the sweets kitchen team

• Train junior staff on hygiene, technique, and presentation


Quality, Hygiene & Compliance

• Food safety and hygiene enforcement

• Regular quality audits


Candidate Profile Experience: 8–15 years in Indian sweets and dessert kitchens with leadership exposure

Skills: Deep technical expertise, aesthetic sensibility, operational mindset, leadership

Attributes: Passionate, disciplined, detail-oriented, innovation-minded
