Job Description – Head Chef (Indian Cuisine)Location: Mumbai

Reporting To: Owner / Operations Lead

Role Overview

We need a chef who can own the kitchen end-to-end — production, consistency, speed, hygiene, and cost control. This is a hands-on role designed for a high-throughput, 20-seater setup where efficiency and discipline drive daily service quality.

Key Responsibilities

• Lead all kitchen operations from breakfast to dinner with tight execution.
• Prepare Indian dishes consistently, maintaining taste, portioning, and presentation standards.
• Drive daily prep with zero lag — marinades, base gravies, breads, chutneys, parathas, curries, rice, and snacks.
• Manage inventory tightly; maintain par stock and avoid wastage.
• Track recipe costing and ensure food cost stays within target margins.
• Maintain kitchen cleanliness as per FSSAI guidelines; ensure sanitization protocols are followed.
• Train and supervise kitchen assistants and helpers.
• Coordinate with front-of-house for timely order delivery.
• Monitor equipment health and escalate issues proactively.
• Adapt the menu based on demand patterns, customer feedback, and operational feasibility.
• Required Skills & Experience–7 years of experience in Indian restaurant kitchens.
• Strong command over North Indian, basic South Indian, and tawa/gravy-based dishes.
• Ability to handle high-pressure service windows with minimal errors.
• Understanding of inventory control, prep cycles, and food safety norms.
