Dosa Master

Job DescriptionWe are looking for an experienced Dosa Master for a South Indian Tiffin Centre in Chennai. The candidate should be able to independently handle the dosa/tiffin counter and consistently prepare good-quality South Indian tiffin items during both normal and peak business hours.

• Responsibilities: Expert preparation of Plain Dosa, Kal Dosa, Masala Dosa, Podi Dosa, Ghee Dosa, Onion Uthappam, Rava Dosa, Onion Rava Dosa and Pesarattu
• Maintain consistent dosa size, colour, crispness, taste and portion
• Properly handle and maintain dosa/idly batter, including checking fermentation and consistency
• Prepare or assist with Idly, Pongal, Poori and Vadai
• Knowledge of Sambar, Coconut Chutney, Kara/Red Chutney, Potato Masala and other tiffin accompaniments
• Handle multiple dosa orders quickly during peak breakfast and dinner hours
• Ensure correct portion control and minimize batter, oil, ghee and ingredient wastage
• Maintain dosa tawa, cooking equipment and work area in a clean and hygienic condition
• Check daily ingredient requirements and inform the kitchen in advance when stock is running low
• Coordinate with kitchen helpers for preparation, cleaning and service
• Follow restaurant recipes and maintain the same taste and quality every day
• Maintain proper food hygiene and kitchen discipline
• Willing to assist with other South Indian kitchen preparation when required

Operating Hours: Morning 7am - 11am and Evening 6pm - 11pm.

Working Hours: 6am to 11am and 5pm to 11pm ( 2 shifts) - Have to be very punctual.

Must have:

• Good experience as a Dosa Master in a South Indian restaurant/hotel
• Ability to work independently without continuous supervision
• Good speed during rush hours
• Experience handling multiple dosa varieties
• Good knowledge of batter consistency and tawa temperature
• Clean and disciplined working habits
• Willingness to follow standardized recipes and portion sizes

Preference will be given to candidates who can also prepare: Idly, Pongal, Poori, Vadai, Sambar, Chutney and other South Indian tiffin items.

Duty: Full-time restaurant duty. Weekly off and working hours can be discussed during interview.

Joining: Immediate joiners preferred.

Selection: Candidates will be required to attend a practical cooking trial before final selection.
