Job Description
A Continental Commis is an junior-level assistant chef in a professional kitchen who specializes in preparing European and Western-style (continental) dishes like pasta, steaks, salads, and soups under the direction of senior cooks.
Main Work Roles and Responsibilities
- Mise en Place (Prep Work): “Perform mise en place (preparation of ingredients) before service.”, which involves chopping vegetables, slicing meats, weighing ingredients, and making basic sauces.
- Cooking and Plating: Assist in cooking and presenting continental menu items according to set recipes and standard portion sizes.
- Kitchen Cleanliness: “Maintain cleanliness and organization of the kitchen and workstations.” during and after food service hours.
- Inventory and Stock: “Monitor stock levels and inform the senior chef about shortages.” and help arrange raw materials or supplies.
- Safety and Hygiene: Follow food safety guidelines, proper labeling, and hygiene standards like HACCP. [1, 2, 3, 4, 5, 6]
