Job Description

The Restaurant Manager is responsible for the overall operations, profitability, customer satisfaction, and team performance of Masale Goa Multicuisine Restaurant & Bar. The role requires strong leadership, operational excellence, financial management, staff development, and a passion for delivering exceptional hospitality. The Restaurant Manager is expected to uphold the brand standards of Masale Goa while ensuring smooth day-to-day operations and achieving business objectives.

Key Responsibilities

Restaurant Operations

  • Manage and supervise all daily restaurant and bar operations.
  • Ensure smooth coordination between kitchen, bar, service, housekeeping, and cashier teams.
  • Maintain high standards of food quality, beverage service, cleanliness, and guest experience.
  • Monitor restaurant ambience, lighting, music, temperature, and overall presentation.
  • Ensure efficient table turnover while maintaining excellent service standards.
  • Supervise opening and closing procedures of the restaurant.
  • Ensure compliance with all company SOPs and operational standards.

Customer Experience

  • Welcome and interact with guests to ensure an outstanding dining experience.
  • Handle guest feedback and complaints promptly and professionally.
  • Build relationships with regular customers and encourage repeat visits.
  • Monitor online reviews and customer feedback to continuously improve service.
  • Ensure every guest receives prompt, courteous, and personalized service.
  • Maintain a guest-first culture across all departments.

Team Leadership & Human Resource Management

  • Recruit, train, mentor, and develop restaurant staff.
  • Conduct induction training for new employees.
  • Prepare staff duty rosters and manage attendance.
  • Evaluate employee performance and conduct regular appraisals.
  • Motivate staff to achieve operational and sales targets.
  • Maintain discipline, grooming, punctuality, and professional behaviour.
  • Resolve staff grievances and encourage teamwork.

Sales & Business Development

  • Drive restaurant sales and maximize profitability.
  • Achieve monthly revenue and operational targets.
  • Develop promotional campaigns, events, and seasonal offers.
  • Coordinate with marketing teams for social media promotions and customer engagement.
  • Increase average bill value through upselling and cross-selling strategies.
  • Build relationships with corporate clients, local businesses, hotels, and event organizers.

Financial Management

  • Monitor daily sales, expenses, and profitability.
  • Control operational costs without compromising quality.
  • Approve purchases and monitor vendor pricing.
  • Review daily cash reports and sales summaries.
  • Ensure accurate billing and cash handling procedures.
  • Coordinate with accounts for financial reconciliation and reporting.
  • Prepare daily, weekly, and monthly operational reports for management.

Inventory & Procurement

  • Monitor inventory levels for food, beverages, liquor, packaging, cleaning materials, and operational supplies.
  • Conduct regular stock audits.
  • Minimize wastage, theft, spoilage, and inventory losses.
  • Coordinate with suppliers for timely procurement.
  • Ensure proper storage following FIFO and FEFO principles.
  • Maintain inventory records and purchase documentation.

Food Safety, Hygiene & Compliance

  • Ensure compliance with FSSAI, Goa Excise, Fire Safety, Labour Laws, and local municipal regulations.
  • Maintain excellent hygiene standards throughout the restaurant.
  • Ensure staff follow food safety procedures and personal hygiene practices.
  • Conduct routine cleanliness and sanitation inspections.
  • Ensure pest control and preventive maintenance schedules are followed.
  • Maintain all statutory licenses and operational records.

Quality Control

  • Regularly inspect food quality, presentation, and portion consistency.
  • Monitor beverage quality and service standards.
  • Ensure SOP compliance across all departments.
  • Conduct regular operational audits and corrective actions.
  • Maintain consistency with the Masale Goa brand standards.

Administration

  • Prepare daily operational reports.
  • Maintain attendance, leave, and payroll records.
  • Monitor maintenance requirements and coordinate repairs.
  • Manage vendor relationships and service contracts.
  • Ensure all company assets are properly maintained.
  • Maintain confidentiality of business information.

Qualifications

  • Minimum 5 years of experience in restaurant operations, including at least 2 years as Restaurant Manager or Assistant Restaurant Manager.
  • Experience in multi-cuisine restaurants and bar operations is highly preferred.
  • Strong understanding of restaurant financials, cost control, and hospitality management.
