Artisan Baker – Sourdough, Bread & Croissants

Location: Keith's Bakery, Vasai West (Bangli / Papdy / Mulgaon)

About the Role:

We're expanding into artisan bread and pastry, and are looking for a skilled baker to lead sourdough bread, bread, and croissant production. This is a hands-on role for someone experienced in natural leavening and lamination techniques who can help us refine and scale our process.

Key Responsibilities:

• Prepare and bake sourdough bread from starter maintenance through bulk fermentation, shaping, proofing, and baking
• Maintain and feed the sourdough starter daily, adjusting for climate and consistency
• Prepare and bake other bread items to consistent quality
• Laminate and produce croissants, managing dough temperature and lamination technique for consistent layering and crumb
• Troubleshoot common issues — over/under-proofing, lamination breakdown, crumb structure — and adjust process accordingly
• Maintain recipe consistency and quality across batches
• Follow hygiene and food safety standards in the bakery
• Manage raw material stock for bread/pastry lines and flag reorder needs

Requirements:

• Prior experience working with sourdough bread and/or laminated pastry (croissants)
• Understanding of fermentation, proofing, and lamination techniques
• Comfortable adapting recipes/process for local climate and ingredient availability
• Basic hygiene and food safety knowledge
• Reliable, punctual, able to work bakery hours
