Position: Production Planning & Operations Manager

Location: Mumbai, Chembur / Kurla (TwentySeven Bakehouse – Central Production Kitchen)

Role Objective

The Production Planning & Operations Manager will be responsible for end-to-end production planning, coordination, and execution at TwentySeven Bakehouse. The role requires translating demand forecasts, sales plans, and operational requirements into clear,structured production plans, ensuring seamless communication with production teams so that output, quality, timelines, and food safety standards are consistently met.This role is ideal for a senior production professional with strong manufacturing, quality, and process background, capable of driving discipline, efficiency, and scalability in a growing bakery operation.

Key Responsibilities

1) Production Planning & Coordination

· Prepare daily, weekly, and monthly production plans based on sales forecasts, outlet requirements, and bulk orders.

· Share clear production schedules, batch plans, and quantities with production teams for smooth execution.

· Coordinate closely with bakery production, dispatch, and inventory teams to ensure right product, right quantity, and right time.

· Monitor plan vs actual production and take corrective actions proactively.

2) Production Operations & Execution

· Oversee execution of production plans on the shop floor without compromising quality, consistency, or food safety.

· Ensure optimum utilization of manpower, machinery, and materials.

· Identify and resolve production bottlenecks, delays, or inefficiencies.

· Support introduction of new products, SKUs, and process improvements.

3) Quality, Food Safety & Compliance

· Ensure strict adherence to GMP, GHP, HACCP, and food safety standards.

· Conduct internal audits and production checks to maintain compliance with FSSAI and internal standards.

· Coordinate with QA teams for raw material checks, in-process controls, and finished goods quality.

· Drive food safety culture and continuous training on hygiene and quality practices.

4) Maintenance & Process Improvement

· Coordinate with maintenance teams for preventive, predictive, and breakdown maintenance.

· Support commissioning of new equipment and process upgrades.

· Implement continuous improvement initiatives to improve productivity, reduce wastage, and enhance yield.

· Track and improve key KPIs such as productivity, rejection, downtime, and cost efficiency.

5) Inventory & Vendor Coordination

· Coordinate with procurement and stores for timely availability of raw materials and packaging materials.

· Monitor material consumption, wastage, and inventory levels.

· Support vendor audits, evaluations, and compliance as required.

6) Team Leadership & Communication

· Act as a bridge between management and shop-floor teams, ensuring clarity and accountability.

· Provide on-the-job training and guidance to production supervisors and operators.

· Maintain clear documentation, SOPs, and production records.

· Ensure smooth communication across production, QA, maintenance, and dispatch teams.

Key Skills & Competencies

· Strong production planning and execution skills

· Proficient in Microsoft Office, Google Sheets

· Deep understanding of food manufacturing / bakery operations

· Hands-on experience in quality management & food safety systems

· Ability to translate plans into clear, executable instructions for production teams

· Strong analytical, problem-solving, and process improvement mind-set

· Excellent communication and team leadership skills

· ERP / SAP exposure preferred

Qualifications

· B.Sc. / Post Graduate Diploma in Chemistry / Food Technology / Production / Industrial Sciences

· 10 to 12+ years of experience in Food & Beverage manufacturing / production operations

Prior experience in managing large-scale production lines and teams preferred
