Cloud Kitchen Manager – Rebel Foods

Location - Bhagalpur Eatsure

We are looking for an experienced and responsible Cloud Kitchen Manager to manage the complete day-to-day operations of our kitchen. The ideal candidate should be strong in staff management, inventory control, food cost, cost efficiency, kitchen operations, and overall business performance.

Key Responsibilities

👥 Staff Management

• Manage staff scheduling, attendance, shifts and productivity.
• Maintain discipline and ensure smooth teamwork.
• Assist in recruitment, onboarding and training of staff.
• Ensure adequate manpower during peak operating hours.

📦 Inventory Management

• Manage daily/weekly inventory and indent requirements.
• Monitor receiving, stock counts and stock accuracy.
• Control wastage, expiry and inventory variance.
• Ensure proper storage and FIFO/FEFO practices.

💰 Food Cost & Cost Control

• Monitor and maintain food cost within the targeted range.
• Identify food-cost leakages and unnecessary expenses.
• Control portion sizes and ensure recipe adherence.
• Monitor labour, packaging, electricity, wastage and other operating costs.

🍗 Kitchen Operations & Quality

• Ensure consistent food quality, taste, portion size and presentation.
• Ensure recipes and SOPs are followed correctly.
• Monitor kitchen productivity and smooth order execution.
• Maintain cleanliness and proper kitchen organisation.

📱 Online Delivery Operations

• Monitor Zomato, Swiggy and Eatsure orders and ensure smooth operations.
• Minimise order delays, cancellations and errors.
• Coordinate with kitchen staff to maintain efficient order flow.

🧾 Daily Reporting & Documentation

• Maintain and review daily sales, inventory, wastage and expense reports.
• Track operational performance and identify areas requiring improvement.
• Report important operational issues and variances to management.

🧹 Hygiene & Compliance

• Maintain high standards of kitchen hygiene and cleanliness.
• Ensure compliance with FSSAI and food safety requirements.
• Monitor pest control, cleaning schedules and equipment maintenance.
• Ensure all staff follow food safety and hygiene SOPs.

🎯 Business Performance

• Work towards improving sales and overall profitability of the outlet.
• Identify opportunities to reduce unnecessary costs and operational leakages.
• Monitor key operational KPIs and take corrective action when required.

👨‍💼 Leadership & Ownership

• Take complete ownership of day-to-day outlet operations.
• Lead the team independently and solve operational problems proactively.
• Should be capable of making practical decisions without constant supervision.
• Maintain a strong focus on sales, profitability, food quality, customer satisfaction and operational efficiency.

Ideal Candidate

• 2–5 years of experience in Restaurant / QSR / Cloud Kitchen / F&B Operations.
• Strong understanding of inventory and food-cost management.
• Good leadership and staff-management skills.
• Comfortable working with sales, inventory and operational reports.
• Should be disciplined, responsible and result-oriented.
• Candidates with experience in multi-brand cloud kitchens or organised QSR/restaurant chains will be preferred
