Food & Beverage Cost Controller

Pizza 4P's India Role Definition:

Stands between Operations and Finance: turns numbers into action by embedding directly into Operations and co-leading improvements on the floor. Makes the most of what already exists, builds what is missing, and delivers results — while putting systems in place to prevent problems from recurring. 

This is a hands-on Player-Controller who works on the floor, not someone who only produces numbers. 

• Wastage & Inventory Control:
• Implement daily wastage tracking and categorization across all SKUs
• Establish acceptable wastage thresholds per category and enforce corrective actions
• Conduct root-cause analysis on high-variance categories (Others – 3.42%, Flour – 1.67%, Cheese – 1.64%)
• Create and maintain a weekly wastage tracker with store-wise breakdown

• Inventory Management System:
• Set up and manage end-to-end inventory management protocols
• Conduct daily inventory counts and reconciliation across outlets
• Manage stock ordering, indenting, and forecasting to minimise dead stock
• Coordinate with vendors for timely delivery and accurate billing

• Product Costing & Variance Analysis:
• Maintain updated product cost cards for all menu items
• Calculate theoretical vs. actual food cost on a daily and monthly basis
• Produce variance reports with actionable insights for each store
• Flag and escalate significant deviations immediately to management

• Monthly Inventory & Audit Management:
• Conduct monthly physical stock audits across all locations
• Prepare audit reports with variance commentary and action plans
• Execute F&B Controls Audits, Training Audits, and Quality & Hygiene (Q&H) audits
• Co-ordinate with the operations team on audit findings and closure timelines

• Action Plan Development & Follow-through:
• Develop corrective action plans for all high-variance and audit non-compliant areas
• Track implementation of action plans with defined deadlines and ownership
• Present monthly performance reports to management with trend analysis
• Conduct training sessions for store operations staff on wastage reduction and inventory discipline

• KPI Management & Operations Staff Performance Monitor &Analyze:
•   KPIs for operations staff 
• Escalate persistent non-compliance to HR and operations heads if needed
