Job Description

  1. शेफ के निर्देशानुसार सब्जियाँ, मांस, समुद्री खाद्य (Seafood) तथा अन्य खाद्य सामग्री तैयार करने में सहायता करना।
  2. सब्जियों, हरी पत्तियों एवं अन्य खाद्य सामग्री को धोना, छीलना, काटना और तैयार करना।
  3. किचन के बर्तन, पतीले, कड़ाही, चॉपिंग बोर्ड तथा भोजन बनाने के उपकरणों को अच्छी तरह धोकर साफ एवं कीटाणुरहित रखना।
  4. भोजन बनाने से पहले, दौरान और बाद में किचन कार्यस्थल को साफ-सुथरा रखना।
  5. खाद्य सुरक्षा नियमों के अनुसार कच्चा माल, सब्जियाँ, डेयरी उत्पाद एवं अन्य खाद्य सामग्री का सही तरीके से भंडारण करना।
  6. खाद्य सामग्री एवं किचन का सामान प्राप्त करने और उसकी जाँच करने में सहायता करना।
  7. सभी सामान को पहले आया–पहले उपयोग (FIFO – First In, First Out) नियम के अनुसार व्यवस्थित रखना।
  8. उत्तर भारतीय (North Indian), चाइनीज़ (Chinese) एवं तंदूर सेक्शन के लिए भोजन की प्रारंभिक तैयारी (Mise en Place) में शेफ की सहायता करना।
  9. मसाले एवं अन्य सामग्री के डिब्बों को समय-समय पर भरना तथा किचन स्टेशनों पर पर्याप्त स्टॉक बनाए रखना।
  10. किचन का कचरा नियमित रूप से हटाकर निर्धारित डस्टबिन में डालना।
  11. फ्रिज, डीप फ्रीज़र, स्टोर रूम तथा रैक को साफ एवं व्यवस्थित रखना।
  12. साफ यूनिफॉर्म, एप्रन, दस्ताने, कैप एवं सुरक्षा जूते पहनकर व्यक्तिगत स्वच्छता बनाए रखना।
  13. उपयोग से पहले फल एवं सब्जियों को अच्छी तरह धोकर साफ करना।
  14. शेफ की देखरेख में मेरिनेशन (Marination), सामग्री का भागों में विभाजन (Portioning) तथा भोजन की प्रारंभिक तैयारी में सहायता करना।
  15. आवश्यकता होने पर तैयार सामग्री को सुरक्षित रूप से किचन के विभिन्न सेक्शनों तक पहुँचाना।
  16. खाद्य सुरक्षा, स्वच्छता, FSSAI के नियमों तथा रेस्टोरेंट की SOP (Standard Operating Procedures) का पालन करना।
  17. व्यस्त समय (Peak Hours) में भोजन समय पर तैयार हो सके, इसके लिए किचन टीम का सहयोग करना।
  18. दुर्घटनाओं से बचने के लिए किचन का फर्श हमेशा साफ, सूखा एवं फिसलन रहित रखना।
