Job Description
Job Summary
The Commis (South Indian Cuisine) is responsible for preparing, cooking, and presenting authentic South Indian dishes while maintaining high standards of food quality, hygiene, and consistency. This role requires hands-on experience in South Indian cuisine, including breakfast items, curries, rice dishes, chutneys, and traditional accompaniments.
Key Responsibilities
- Prepare and cook a variety of South Indian dishes such as idli, dosa, vada, uttapam, appam, pongal, upma, sambar, rasam, chutneys, kurma, and regional curries.
- Ensure mise en place is completed before service.
- Maintain consistency in taste, presentation, and portion sizes.
- Prepare batters, spice mixes, gravies, and accompaniments according to standard recipes.
- Monitor food quality, freshness, and proper storage of ingredients.
- Follow food safety, hygiene, and sanitation standards (HACCP/FSSAI guidelines).
- Maintain cleanliness of workstations, kitchen equipment, and utensils.
- Minimize food wastage and support effective inventory control.
- Assist with stock rotation using FIFO (First In, First Out) principles.
- Coordinate with the kitchen team to ensure smooth service during peak hours.
- Support menu development and special promotions when required.
- Report equipment issues or maintenance requirements to the supervisor.
Required Qualifications
- Diploma or certification in Culinary Arts, Hotel Management, or a related field (preferred).
- 2–4 years of experience in South Indian cuisine, preferably in hotels, restaurants, or catering operations.
- Strong knowledge of traditional South Indian cooking techniques and regional specialties.
- Understanding of food safety and hygiene standards.
- Ability to work efficiently in a fast-paced kitchen environment.
