About the Role

Livemills is a transparent food manufacturing and retail concept where customers watch fresh dairy staples being made in-store. We're looking for a Dairy Production Executive to own daily production of our core dairy lineup — A2 bilona ghee, bilona makkhan, fresh paneer, curd, and buttermilk — while maintaining the quality, hygiene, and consistency our brand stands for.

Key Responsibilities

• Handle end-to-end daily production of paneer, curd, makkhan, ghee, and buttermilk as per standard recipes and batch plans.
• Operate and manage dairy equipment including steam-jacketed kettle, milk analyzer, and incubation/setting processes.
• Conduct incoming milk quality checks (fat, SNF, adulteration) using the milk analyzer and reject substandard supply.
• Maintain strict hygiene, sanitation, and food safety standards across the production area and utensils.
• Manage batch yields, minimize wastage, and track raw milk to finished product conversion.
• Ensure freshness, correct setting/curing times, and consistent taste and texture across batches.
• Maintain production records, batch logs, and FSSAI-compliant documentation.
• Coordinate with the retail/sales team on daily output and replenishment needs.

Requirements

• 2+ years of hands-on experience in dairy production (paneer, curd, ghee, or traditional bilona processes preferred).
• Working knowledge of milk testing, dairy hygiene, and food safety practices.
• Familiarity with operating dairy production equipment.
• Attention to detail with a strong sense of cleanliness and consistency.
• Reliability and ability to manage early-morning production schedules.

• डेयरी उपकरण जैसे स्टीम-जैकेटेड कैटल, मिल्क एनालाइज़र और सेटिंग/इन्क्यूबेशन प्रोसेस को चलाना और संभालना।
• आने वाले दूध की क्वालिटी जाँच (फैट, SNF, मिलावट) मिल्क एनालाइज़र से करना और घटिया दूध को रिजेक्ट करना।
• प्रोडक्शन एरिया और बर्तनों में सख़्त साफ़-सफ़ाई, सैनिटेशन और फूड सेफ्टी बनाए रखना।
• बैच यील्ड संभालना, बर्बादी कम करना और दूध से तैयार माल तक की मात्रा को ट्रैक करना।
• ताज़गी, सही सेटिंग/जमाने का समय, और हर बैच में एक जैसा स्वाद और टेक्सचर सुनिश्चित करना।
• प्रोडक्शन रिकॉर्ड, बैच लॉग और FSSAI के अनुसार ज़रूरी दस्तावेज़ रखना।
• रोज़ाना उत्पादन और दोबारा भरने की ज़रूरत पर रिटेल/सेल्स टीम के साथ तालमेल रखना।

ज़रूरी योग्यताएँ

• डेयरी उत्पादन में 2+ साल का व्यावहारिक अनुभव (पनीर, दही, घी या पारंपरिक बिलोना प्रोसेस को प्राथमिकता)।
• दूध की जाँच, डेयरी साफ़-सफ़ाई और फूड सेफ्टी की जानकारी।
• डेयरी उपकरण चलाने की समझ।
• बारीकी पर ध्यान, और साफ़-सफ़ाई व एकरूपता की मज़बूत समझ।
• भरोसेमंद और सुबह जल्दी के प्रोडक्शन शेड्यूल को संभालने की क्षमता।
