Reports To: Executive Chef / Restaurant Manager

Location: The Anandam Cafe – HSR Layout, Bangalore

ROLE OBJECTIVETo independently handle South Indian kitchen production, shift execution, prep planning, and kitchen coordination during high-volume operations.

The role requires:

CORE RESPONSIBILITIES1. Production Planning & Prep Readiness

• Plan daily prep based on expected sales and peak hours

• Ensure timely preparation of batter, chutneys, sambars, meals, snacks, and rice items

• Coordinate production timelines with kitchen team

• Ensure complete mise-en-place before service

2. South Indian Food Production

• Hands-on preparation and supervision of dosa, idli, vada, pongal, rice bowls, meals, and snacks

• Maintain authentic taste consistency

• Ensure portion control and recipe adherence

• Conduct batch quality checks before service

3. Shift Execution & Kitchen Coordination

• Coordinate tawa, fry, rice, dispatch, and prep sections

• Ensure smooth kitchen execution during breakfast, lunch, snacks, and dinner

• Handle rush-hour production efficiently

• Support FOH team for faster service execution

4. Team Supervision

• Supervise cooks, helpers, and stewards during shift

• Guide junior staff on recipes, SOPs, and hygiene standards

• Ensure discipline and shift readiness

• Support shift handovers and operational coordination

5. Inventory & Wastage Control

• Coordinate with Store Keeper for daily stock requirements

• Prevent stock-outs during operations

• Ensure FIFO/FEFO practices

• Reduce food wastage and excess preparation

6. Hygiene & Safety

• Maintain kitchen cleanliness throughout shift

• Ensure proper food handling and storage

• Monitor daily cleaning practices

• Ensure safe use of equipment and kitchen utilities

REQUIRED SKILLS• Strong South Indian cooking expertise

• Experience in high-volume kitchen operations

• Production planning capability

• Kitchen coordination & supervision skills

• Knowledge of batter fermentation & prep cycles

• Understanding of hygiene and food safety

• Ability to work efficiently during rush hours

PREFERRED EXPERIENCE• 8–15 years experience in South Indian kitchens

• Experience in café / QSR / high-volume kitchens preferred

• Experience handling breakfast-heavy operations preferred

• Experience managing production + operations together preferred
