• Uttapam, pongal, chutneys
• Managing the tawa/dosa station and ensuring proper batter consistency
• Overseeing mise en place (pre-preparation of ingredients)
• Maintaining taste, hygiene, and presentation standards
• Monitoring food quality and portion control
• Coordinating with commis chefs and guiding them
• 👨‍🍳 Skills RequiredStrong knowledge of South Indian ingredients and cooking techniques
• Expertise in fermentation (for dosa/idli batter)
• Ability to handle high-volume service (especially in busy restaurants or hotels)
• Good time management and multitasking skills

• Supervises Commis 1, 2, and 3 in the South Indian section
