Job Description
Key Responsibilities
- Raw Material Quality
- Inspect and approve incoming raw materials, packaging materials, oils, spices, grains, potatoes, etc.
- Maintain raw-material specifications and acceptance criteria.
- Coordinate with suppliers for quality-related issues.
- Production Quality Control
- Monitor production processes and critical control points.
- Check parameters such as frying temperature, moisture, oil quality, colour, texture, weight and seasoning.
- Ensure products meet approved specifications.
- Product Development
- Develop and improve new snack products and recipes.
- Conduct trials and prepare standardised recipes.
- Optimise taste, texture, yield, cost and shelf life.
- Quality & Food Safety
- Implement GMP, GHP, HACCP and food-safety procedures.
- Conduct regular hygiene and sanitation inspections.
- Identify quality deviations and take corrective/preventive actions.
- Laboratory Testing
- Conduct or coordinate testing of finished products and raw materials.
- Monitor moisture, acidity, rancidity/oil quality and other relevant parameters.
- Maintain laboratory records and test reports.
- Shelf-Life & Stability
- Conduct shelf-life studies.
- Monitor changes in taste, odour, colour, texture and microbiological quality.
- Recommend appropriate shelf-life and storage conditions.
- Documentation
- Prepare and maintain:
- Product specifications
- SOPs
- Batch records
- QC reports
- COAs
- Trial reports
- Shelf-life reports
- Cleaning and hygiene records
- Packaging & Labelling
- Verify packaging specifications and pack integrity.
- Check product labels for required declarations and regulatory compliance.
- Coordinate with packaging suppliers for quality issues.
- Complaint Handling
- Investigate customer complaints.
- Identify root causes and implement corrective actions.
- Maintain complaint and CAPA records.
- Regulatory Compliance
- Ensure products and processes comply with applicable FSSAI requirements and food-safety regulations.
- Support inspections, audits and documentation requirements.
