Job SummaryWe are seeking a hands-on, quality-driven Food Production Executive based in Pune to oversee daily manufacturing operations for our Peanut Chikki and protein bar production lines. The ideal candidate will possess deep technical knowledge of sugar and jaggery syrup cooking, temperature and density (brix) monitoring, batch mixing, and extrusion processes. You will manage shop-floor operations, ensure high product yields, minimize waste, and maintain strict hygiene and FSSAI standards.

• Key Responsibilities1. Process & Syrup ManagementOversee precise preparation, boiling, and caramelization of sugar and jaggery syrups to achieve exact stage/brix consistency required for Chikki and protein bar binding.
• Monitor critical cooking temperatures, moisture levels, and mixing ratios to prevent crystallization, off-flavors, or texture issues.
• Manage roasting, blanching, mixing, spreading, cutting, and extrusion processes for both traditional Chikki and modern protein bar formulations.
• 2. Line Supervision & Daily OperationsExecute daily production schedules to meet volume targets while managing shop-floor operators and contract labor.
• Perform regular batch-level checks on weight consistency, thickness, texture, and visual appeal before product moves to packaging.
• Troubleshoot line bottlenecks, equipment downtime, and process variations in real time.
• 3. Quality Assurance & Food Safety ComplianceEnforce strict adherence to Good Manufacturing Practices (GMP), HACCP, and FSSAI guidelines across all shifts.
• Maintain cleanroom and line sanitation standards, including sanitation pre-checks before production runs.
• Work closely with Quality Control (QC) to test raw materials, syrup samples, and finished goods for shelf-life stability.
• 4. Inventory, Yield & Waste ControlTrack raw material utilization (peanuts, jaggery, sugar, protein powders, binders) and maintain accurate daily batch logs.
• Focus on yield optimization, keeping product giveaway and scrap margins to a minimum during cutting and packaging.
• Key Requirements & SkillsExperience: 2–5 years of hands-on experience in confectionery, snack bar, or bakery manufacturing (specifically with Peanut Chikki, brittle, or extruded protein bars).
• Technical Expertise: Strong practical knowledge of sugar/jaggery syrup cooking phases, refractometer usage (brix measurement), and binder chemistry.
• Education: Diploma/Degree in Food Technology, Food Processing, Dairy Technology, or a related field.
• Location: Based in Pune or willing to relocate immediately.
• Soft Skills: Strong leadership, shop-floor communication, time management, and problem-solving skills under fast-paced production deadlines.
• Key Performance Indicators (KPIs)Batch Consistency: Zero defects related to syrup binding, texture, or crystallization.
• Production Yield: Minimizing process waste and scrap rates to below target percentage.
• Line Output: Meeting daily/weekly volume output goals while maintaining safety standards.
• FSSAI/Safety Audits: 100% compliance during internal and external hygiene checks.
