Bakery Master

The Bakery Master is responsible for overseeing the entire production cycle, ensuring that every product—from artisanal breads to specialized cakes and rusks—meets the highest quality and consistency standards. This role combines advanced technical baking expertise with leadership, requiring the ability to manage production teams, maintain strict hygiene protocols, and drive innovation in the product lineup.  

Key Responsibilities

1. Production & Quality Control

 Production Oversight: Manage daily production schedules for all baked goods, ensuring timely availability for retail and catering orders.

 Technical Mastery: Execute and supervise complex baking processes, including fermentation, dough development, lamination, and precise temperature/humidity control.

 Quality Assurance: Conduct daily organoleptic checks (taste, texture, appearance) on all batches to ensure they meet your brand’s specifications.

 Innovation: Lead the development of new recipes and seasonal products, testing and refining formulations for cakes, snacks, and specialty items.

2. Operational Management

 Inventory & Cost Control: Monitor raw material levels, manage vendor relations, and minimize "shrink" (waste) through accurate scaling and inventory audits.  

 Compliance: Maintain rigorous standards of food safety, hygiene, and sanitation (ensuring full compliance with FSSAI or local health regulations).  

 Equipment Maintenance: Oversee the proper use, cleaning, and routine servicing of heavy machinery (mixers, ovens, sheeters) to prevent downtime.

3. Team Leadership

 Supervision: Lead, train, and mentor the baking staff to ensure uniform techniques and adherence to standard operating procedures (SOPs).  

 Scheduling: Coordinate staff shifts to optimize productivity, especially during peak demand or festive seasons.  

 Communication: Maintain open channels between the production area, the storefront/sales team, and management to ensure customer feedback is integrated into production.  

Required Skills & Qualifications

 Technical Proficiency: Extensive experience with professional bakery equipment and deep knowledge of ingredient science (e.g., fats, leavening agents, flour types).

 Leadership: Proven ability to manage a team in a fast-paced environment and enforce high operational standards.

 Analytical Thinking: Proficiency in scaling recipes, managing yields, and performing cost-benefit analyses on new product lines.  

 Physical Stamina: Ability to stand for long periods and handle the physical demands of high-volume production.  

 Education: A diploma or degree in Baking and Pastry Arts or equivalent professional experience is preferred.
