Job Description
· Allocating jobs to all the tandoor production staffs
· Planning leave schedule of tandoor production staff and ensure perfect balance of work and adequate time for rest for the team
· Checking and ensuring attendance of all tandoor production staff
· Ensuring all the tandoor production staff are doing jobs allocated to them strictly following the set processes and maintaining timeline of shift readiness
· Briefing all the tandoor production staff about previous day's area of concerns/mistakes/defects and guide improvement along with action plans on a daily basis
· Checking all the items in fridge and ensure no spoiled or about to spoil item is used in production
· Ensuring optimum materials requisitions and verifying the quality and quantity of raw materials received as per requisitions given
· Manpower training/handholding to ensure production quality, look, taste, fragrance and portion size of all the tandoori items as per the set standard. This includes, identifying the capabilities/potentials of people and develop them accordingly for higher responsibilities
· Also training people on multiple tasks to create back up in each position to help smooth operations, especially during crisis/shortage of manpower situations
· Update about manpower requirements well in advance and help sourcing manpower as far as possible
· Managing quality of guest food as well as staff food
· Cost control ensuring quality and taste of the set standard
· Strictly Minimizing all types of wastage
· Ensuring personal hygiene of production team and kitchen hygiene at all time
· Strictly maintaining discipline of tandoor production staff inside Dhaba at all time
· Final preparation of dishes ensuring superior standard of taste with consistency and uniformity of Head Cook-Tandoor's own preparation as well as other cooks’ preparation. This includes veg and non-veg tandoori items as well as tandoori bread items
· In absence of any manpower, Head Cook-Tandoor has to ensure reallocating that job to an alternative person. In some unavoidable cases senior staffs including Head Cook-Tandoor himself may need to extend helping hand to complete the job of the person who is absent, till the alternative arrangement is being made
· Preparing various types of masalas for marination’s as per the set standard
· Ensuring and delivering production support like, cutting, chopping ingredients (Vegetable, Meat, Paneer etc.), marination’s and getting sheek ready, atta/maida peda cutting etc. required for dishes with superior standard with consistency and uniformity
· Ensure preserving all the excess items in refrigerator or otherwise after cooling and covering adequately
· Ensure proper handling of Bhatti/Kitchen/Electrical equipment inside the kitchen for smooth functioning and update immediately on requirement of any repair or preventive maintenance.
