### Job Summary

We are a B2B central production bakery based in Nungambakkam, supplying daily fresh-baked products to retail outlets across Chennai. We are seeking an experienced **Intermediate Baker / Commis 1** to join our production line. You will play a key role in handling daily batch baking, recipe scaling, oven management, and maintaining product consistency across our full dessert menu.

### Roles & Responsibilities

#### 1. Batch Preparation & Recipe Scaling

* Independently measure and scale raw materials using digital balances according to exact SOP weight recipes.

* Prepare batters, doughs, and fillings for large-batch production runs without supervision.

#### 2. Core Menu Production

* **Specialty Products:** Assemble and bake signature items (*Dham Adai Cashew, Dham Adai Blueberry, Dham Adai Strawberry*).

* **Brownies & Specialty Bars:** Prepare, layer, and bake our brownie range with precise texture control (*Biscoff Brownie, Milk Choco Chip Brownie, Triple Choco Brownie, Walnut Brownie*).

* **Cakes & Jars:** Batter preparation and assembly for specialty items (*Milk Cake, Biscoff Milk Cake, Mango Milk Cake, Death by Chocolate Cake*).

* **Tea / Loaf Cakes & Delicacies:** Bake batch products including *Banana Cake, Marble Cake*, and *Milk Choco Madelines*.

#### 3. Oven Operations & Quality Control

* Independently operate commercial deck and rotary ovens, managing accurate baking temperatures, pre-heating, and baking times.

* Ensure uniform texture, height, crust colour, and weight across all finished goods before cooling.

#### 4. Slicing, Portioning & Waste Reduction

* Accurately unmold, cool, slice, and portion cakes and brownies according to strict dimensional and weight guidelines to minimize product wastage.

#### 5. Kitchen & Food Safety Standards

* Maintain clean work stations, tools, and heavy machinery throughout production.

* Adhere strictly to FSSAI guidelines, personal hygiene, and kitchen sanitation practices.

### Key Requirements & Skills

* **Experience:** 2 to 4 years of hands-on experience in a commercial bakery, hotel kitchen, or central production setup.

* **Technical Skills:** Strong proficiency in batch baking, oven management, cake/brownie batter prep, and weight-based scaling.

* **Accuracy:** Ability to follow strict SOPs and recipe cards without deviating from standard ratios.

* **Physical Capability:** Comfortable working in a fast-paced commercial kitchen, handling heavy mixing bowls, and managing oven loading/unloading.

* **Language:** Functional Tamil (Hindi / English is a plus).

* **Salary:** ₹18,000 – ₹20,000 per month

* **Work Days:** 6 Days a week (Rotational week off)
