Job Description

जॉब समरी:इंडियन कुक / शेफ (तंदूर शेफ) का मुख्य कार्य विभिन्न प्रकार के भारतीय व्यंजन तैयार करना है, जिसमें तंदूर से बने व्यंजनों की विशेष जिम्मेदारी शामिल है। यह भूमिका उच्च गुणवत्ता वाला भोजन तैयार करने, स्वच्छता बनाए रखने और किचन के सुचारू संचालन को सुनिश्चित करने पर केंद्रित है। उम्मीदवार को नॉर्थ इंडियन व्यंजनों जैसे रोटी, नान, कबाब, करी आदि का अच्छा ज्ञान होना चाहिए।

  • मुख्य कार्य एवं जिम्मेदारियां:1. खाना बनाना और तैयारीविभिन्न भारतीय व्यंजन जैसे दाल, सब्जी, करी, चावल और रोटी बनाना।
  • तंदूर से बनने वाले आइटम जैसे नान, रोटी, कुलचा, टिक्का, कबाब आदि तैयार करना।
  • स्वाद, मात्रा और प्रस्तुति में एकरूपता बनाए रखना।
  • 2. तंदूर संचालनतंदूर को सुरक्षित और प्रभावी तरीके से चलाना।
  • तापमान को नियंत्रित करना और ईंधन (कोयला/गैस) का सही उपयोग करना।
  • मीट और सब्जियों के लिए मेरिनेशन तैयार करना और सही समय तक मेरिनेट करना।
  • खाना पकाने के समय का ध्यान रखना ताकि भोजन न जले और न ही कच्चा रहे।
  • 3. स्वच्छता एवं सुरक्षाकिचन और तंदूर क्षेत्र की साफ-सफाई बनाए रखना।
  • फूड सेफ्टी और हाइजीन (FSSAI) के नियमों का पालन करना।
  • कच्चे और पके हुए खाद्य पदार्थों का सही स्टोरेज करना।
  • आवश्यकतानुसार सुरक्षा उपकरण (PPE) का उपयोग करना।
  • 4. स्टॉक और इन्वेंटरी प्रबंधनकच्चे माल (मसाले, सब्जियां, मीट आदि) की उपलब्धता पर नजर रखना।
  • खाद्य सामग्री का सही उपयोग कर वेस्टेज कम करना।
  • 5. गुणवत्ता नियंत्रणभोजन की गुणवत्ता को कंपनी के मानकों के अनुसार बनाए रखना।
  • सर्व करने से पहले स्वाद की जांच करना।
  • 6. टीम समन्वयकिचन हेल्पर और अन्य शेफ के साथ मिलकर काम करना।
  • समय पर ऑर्डर पूरा करने के लिए सर्विस टीम के साथ तालमेल रखना।
  • 7. समय प्रबंधनऑर्डर और बल्क कुकिंग के अनुसार समय पर खाना तैयार करना।
  • पीक टाइम में भी गुणवत्ता बनाए रखते हुए काम करना।
  • आवश्यक कौशल और योग्यता:भारतीय व्यंजनों का अच्छा ज्ञान (नॉर्थ इंडियन प्रेफर्ड)।
  • तंदूर कुकिंग में विशेषज्ञता।
  • तेज गति वाले किचन में काम करने की क्षमता।
  • फूड सेफ्टी नियमों की बेसिक समझ।
  • अतिरिक्त आवश्यकताएं:लंबे समय तक खड़े होकर काम करने की क्षमता।
  • शिफ्ट में काम करने की लचीलापन।
  • साफ-सफाई और अनुशासन का पालन।
