Job Description: Head Chef

Location: Road 45, Jubilee Hills, Hyderabad

Role Overview

We are looking for a creative and highly organized Head Chef to spearhead our culinary operations. The ideal candidate will bridge the gap between authentic Mediterranean traditions and modern multi-cuisine expectations, all while upholding our commitment to functional nutrition and "soil-to-plate" transparency. You will lead the kitchen team, manage daily operations, and utilize technology to ensure efficiency and profitability.


Key Responsibilities

Culinary Excellence: Design and execute a menu focusing on Mediterranean and healthy multi-cuisine dishes. Prioritize nutrient density, cold-pressed oils, and seasonal, traceable ingredients.

Kitchen Management: Oversee all BOH (Back of House) operations, including food preparation, plating standards, and strict adherence to hygiene and safety protocols.

Inventory & Sourcing: Manage relationships with suppliers to secure premium organic produce. Conduct regular stock audits to minimize waste and maintain food cost targets.

Systems & Technology: Direct daily operations using POS (Point of Sale) systems for order tracking, inventory management, and sales reporting.

Leadership: Recruit, train, and mentor kitchen staff. Foster a high-performance culture aligned with our "One Health" philosophy.

Performance Tracking: Maintain detailed digital records of kitchen expenses, labor costs, and recipe standardization using basic computer applications.

Qualifications & Skills

Education: A Bachelor’s Degree or Diploma in Hotel Management / Culinary Arts from a reputed institution.

Certification: Mandatory professional Chef Certifications (e.g., CEC, WACS, or equivalent industry-recognized credentials).

Experience: 5–10 years in professional kitchens, with at least 3 years in a Head Chef or Executive Sous Chef role, specifically handling Mediterranean or high-end multi-cuisine formats.

Technical Literacy: * Proficiency in POS Management software.

Strong Computer Skills (Excel, Email, and digital inventory tools) for administrative reporting.

Operational Mindset: Strong understanding of kitchen P&L, food costing, and labor management.

Cloud Kitchen Operations

* Work closely with the delivery and operations teams to ensure food quality is maintained during the last mile.

* Optimize kitchen efficiency without compromising quality.


Inventory & Cost Management


* Monitor inventory, procurement, and food costs.

* Minimize wastage while maintaining premium ingredient quality.

* Develop standard recipes and costing sheets.


Team Leadership


* Recruit, train, mentor, and supervise kitchen staff.

* Foster a culture of discipline, innovation, cleanliness, and continuous improvement.

* Conduct regular skill development and quality training sessions.



Required Qualifications


* Degree or Diploma in Hotel Management, Culinary Arts, or Professional Cookery.

* Professional certifications in Mediterranean, Italian, Baking, or Nutrition will be an added advantage.

* FSSAI Food Safety certification preferred.



Experience


* Minimum 5 years leading a cloud kitchen, premium café, wellness kitchen, or Mediterranean/Italian restaurant.

* Proven experience managing high-volume operations while maintaining premium quality standards.



Technical Skills


* Expert knowledge of Mediterranean and Italian cuisines.

* Strong understanding of sourdough fermentation, pizza dough hydration, fresh pasta production, healthy sauces, and artisanal cooking techniques.

* Knowledge of nutrition, calorie calculation, macronutrients, and therapeutic diets.

* Experience with cloud kitchen operations and delivery workflows.


Digital Skills (Mandatory)


* Proficient in Kitchen Display Systems (KDS).

* Comfortable using Swiggy, Zomato, and direct ordering dashboards.

* Good working knowledge of POS systems, inventory software, Microsoft Excel, email, and basic computer applications.


Leadership Competencies


* Strong leadership and people management skills.

* Excellent planning, communication, and organizational abilities.
