Job Description
- 1. Menu Development & R&DLead menu planning, innovation, and seasonal menu development.
- Conduct research & development (R&D) for new recipes, concepts, and cuisines.
- Standardize recipes, portion sizes, and presentation techniques.
- Continuously upgrade menu offerings based on market trends and customer preferences.
- 2. Menu Engineering & ProfitabilityDesign menus using menu engineering techniques (high-margin vs high-volume items).
- Analyze sales data to optimize menu performance.
- Ensure a balance between customer appeal and profitability.
- Introduce cost-effective alternatives without compromising quality.
- 3. Food Cost & Inventory ControlMonitor and control food cost percentage and wastage.
- Plan procurement and manage vendor negotiations.
- Implement portion control and minimize pilferage.
- Maintain inventory levels and conduct regular stock audits.
- 4. Kitchen Operations ManagementOversee daily kitchen operations including production, hygiene, and quality control.
- Ensure consistency in taste, presentation, and service standards.
- Maintain compliance with food safety and hygiene regulations (FSSAI standards).
- 5. Staffing & Team ManagementPlan and manage kitchen staffing requirements.
- Recruit, train, and supervise kitchen staff.
- Allocate duties, prepare rosters, and monitor staff performance.
- Foster discipline, teamwork, and a high-performance culture in the kitchen.
- 6. Quality Control & Customer SatisfactionEnsure all dishes meet quality standards before service.
- Address customer feedback and improve offerings accordingly.
- Maintain brand standards in taste, presentation, and service.
- 7. Cost Optimization & EfficiencyIdentify areas to reduce operational costs without affecting quality.
- Improve kitchen workflow and productivity.
- Optimize use of raw materials and resources.
- 8. Compliance & SafetyEnsure adherence to food safety, hygiene, and sanitation standards.
- Maintain kitchen equipment and ensure safe working conditions.
- Comply with all statutory and regulatory requirements.
- 9. Coordination & ReportingWork closely with management on budgeting and planning.
- Coordinate with procurement, operations, and service teams.
- Provide regular reports on food cost, sales trends, and kitchen performance.
- Skills & RequirementsProven experience as Executive Chef or Senior Chef role.
- Strong expertise in menu engineering, food costing, and R&D.
- Leadership and team management skills.
- Knowledge of multi-cuisine or specialized cuisine (as required).
- Understanding of inventory systems and kitchen operations.
- Creativity with strong business acumen.
